I love an easy no bake treat! A few favorites include: No Bake Cookies, No Bake Monster Cookie Bars, Peanut Butter Protein Balls, and No Bake Peanut Butter Bars.

These No Bake Almond Joy Bars are a delicious treat combining chocolate, coconut, and almonds. They will remind you of the classic candy bar, but I think they are even better. You are going to love this healthy homemade version! These bars are packed with protein, but taste like a candy bar. The BEST!

The bars are layered in a loaf pan and there is no baking involved. The base layers is made with almond butter, oats, almond flour, coconut, cocoa powder, sea salt, and sweetened with honey. I also add a scoop of chocolate protein powder to give the bars a boost of protein.

Press the chocolate coconut mixture into the pan and spread melted chocolate over the top. Finish the bars with coconut, chopped almonds, and flaky sea salt. Chill in the refrigerator and then cut into bars.

These homemade Almond Joy Bars are a sweet and satisfying treat that captures the essence of the classic candy bar. Keep in the fridge for whenever you need an energy boost or for whenever you are craving something sweet.

Ingredients

  • Almond butter– make sure you stir the almond butter well before using. You want it to be nice and creamy.
  • Honey– to sweeten the bars. You can also use pure maple syrup.
  • Vanilla extract
  • Oats– use old fashioned oats. If you need the bars to be gluten-free, make sure you use gluten-free oats.
  • Coconut– you can use flaked unsweetened or sweetened coconut.
  • Almond flour– I love the texture of almond flour for these bars.
  • Protein powder– use your favorite chocolate protein powder. I use Clean Simple Eats Brownie Batter. Use the code TWOPEAS for a discount. Collagen powder will also work.
  • Cocoa powder– you can use regular unsweetened cocoa powder or Dutch processed.
  • Sea salt– use in the bars and sprinkle some on top!
  • Chocolate chips– I use semi-sweet chocolate chips, but dark chocolate or milk chocolate will work too.
  • Coconut oil– add a little coconut oil to the chocolate to make it extra shiny. It also helps it set up. Vegetable oil will work too.
  • Almonds– sprinkle chopped almonds on top of the bars.

How to Make Almond Joy Bars

  • Line a 9×5-inch loaf pan with parchment paper. Set aside.
  • In a large bowl, combine the almond butter, honey, and vanilla extract. Stir until smooth.

  • Add the oats, coconut, almond flour, protein powder, cocoa powder, and sea salt. Stir until well combined. The mixture will be thick.

  • Press the mixture evenly into the bottom of the prepared pan.

  • In a medium microwave safe bowl, combine the chocolate chips and coconut oil. Place in the microwave and heat in 30 second intervals, or until smooth. Stir well.
  • Pour the chocolate overtop of the bars. Spread with a spatula so the chocolate is in an even layer.

  • Sprinkle the almonds over the chocolate. Top with coconut and flaky sea salt.

  • Cover the pan with plastic wrap and place in the refrigerator. Chill the bars for at least 2 hours before cutting.

How to Store the Bars

  • Store the bars in an airtight container in the refrigerator for up to 2 weeks.
  • You can freeze the bars in a freezer container for up to 3 months.

  1. Can they be made without the protein powder? Is there something else that needs to be substituted in its place or can it just be omitted?

    1. Yes, you can use collagen powder or omit it. If the mixture is to moist without it, add a little extra almond flour.
