Instant Pot Cilantro Lime Rice

Instant Pot Cilantro Lime Rice is easy to make and a great side dish for any Mexican meal.
Josh loves the Instant Pot. He uses it all of the time to make hard boiled eggs, quinoa, rice, and his favorite 4-Ingredient Instant Pot Chicken Chile Verde. I still haven’t touched it yet because Josh is having so much fun with it. I want to try some recipes soon, but right now, I am letting Josh have all of the fun.
Josh has been making Instant Pot Cilantro Lime Rice and it is so good! I shared a little teaser on Instagram stories and I got a ton of messages from you guys begging for the recipe. Well, today is your lucky today because we are sharing this super easy recipe for cilantro lime rice. You are going to love it.
If you like Chipotle’s rice, you will LOVE this easy recipe you can make at home. The Instant Pot cooks the rice in a jiffy and it turns out perfect every single time. Josh cooks the rice in water and broth, to give it extra flavor. The addition of cilantro and lime makes the rice extra flavorful and the perfect side dish to any Mexican meal.
We like to serve the cilantro lime rice with enchiladas, tacos, Slow Cooker Mexican Chicken, Instant Pot Chicken Chile Verde, quesadillas, and more! The rice is a great base for burrito bowls too! You can add your favorite toppings and create a fun meal.
Get out your Instant Pot and make this EASY Instant Pot Cilantro Lime Rice. And if you don’t have an Instant Pot, you should probably think about getting one. We are really enjoying ours…well, Josh is enjoying it and I am enjoying eating what he makes:)
Instant Pot Cilantro Lime Rice
Ingredients
- 2 cups vegetable broth
- 3/4 cup water
- 2 tablespoons canola vegetable, or grapeseed oil
- 3 tablespoons juice of lime divided
- 2 cups long grain white riceย
- Zest of oneย limeย
- 1/2 cup of fresh chopped cilantroย
- 1/2 teaspoon salt
Instructions
- Put the broth, water, oil, 2 tablespoons of lime juice, and rice in the Instant Pot. Lock the lid in place and push the "Rice" button on the Instant Pot. This will cook the rice for 12 minutes. When the Instant Pot beeps, let it sit for 5 more minutes. After the 5 minutes, using a hot pad, quick release the pressure by turning the steam release valve toย vent. Let all of the steam out and carefully remove the lid.
- Transfer the rice to a large bowl. Fluff the rice with a fork. Add the remaining tablespoon of lime juice, lime zest, chopped cilantro, and salt. Stir and fluff the rice again with a fork. Serve warm.
- Note-we have the 6 QT Instant Pot.

Sure, you can use brown rice. Follow the Instant Pot instructions for the cooking time.

Made this on Friday night and absolutely loved it. How do I adjust for brown rice?
I make brown rice in my pressure cooker all the time and do 2:1 ratio water to rice (not going over max fill line). I’m guessing I could do the same thing here with the added ingredients during the cooking and at the end… ย I also set my cooker for 15 minutes.ย
yes, I am sure brown rice would work too with a little adjustment.
For stove top I do 2:1 ratio, but for IP, I do 1 part rice to 1.25 liquid. Both Brown and White.
White rice button is 12 minutes for programmable button for 12 minutes on LOW pressure.
If you do HIGH PRESSURE, MANUAL, then it only takes 4-6 minutes.
For brown rice, 22 minutes HIGH pressure works for me. I live at sea level.
I always NR for at least 10 minutes because I read that the starchy steam from rice can clog your valve.
I’ve never had lime rice before, this sounds nice and refreshing! I’ve just read another lovely recipe for some spicy chili so I might put the two together for tonights meal!
Could this be made on the stove? Without an Instant Pot?
I haven’t tried it, but I am sure it would be fine, just adjust the cooking time for the stove.
You also need to adjust the liquid.
In pressure cooker I do 2:1 ratio of liquid to rice. In IP I do 1.25 : 1.
Stovetop rice 20 minutes of simmer after comes to a boil for white rice and 40 minutes for brown.
How would you go about doubling this for the instant pot?
I have made this both stove-top and in rice cooker.
For stove-top I do a 2 part liquid to one part rice.
For rice cooker, I use the cup that came with it to measure the rice, and the lines on the side of the inner pot for the liquid.
Stove top, bring to a boil, give it a stir, then cover and simmer 20 minutes for white rice or 40 minutes for brown rice.
I like the lime zest added before cooking.
I serve with lime wedges for a fresh lime taste.
LOL I read that as doing this without an IP, as opposed to doubling it.
Doubling it turns out perfect, no adjustments.
I doubled the recipe tonight in my 6qt. Instant Pot & cooked it for the 12 mins on the rice setting, turned out perfect!!

I haven’t used the 8 qt. Maybe read the instructions for rice and see what it says. I am guessing it would be fine.

Check your Instant Pot manual. I am not sure on the exact time for doubling.

I have recently discovered that the 12 minute preset button for white rice cooks your rice on low pressure.
If you want to speed things up, do HIGH pressure for 4-6 minutes depending on your texture preference.
If you use brown rice, 22 minutes HIGH pressure works for me. (I live at sea level)

I use a similar recipe. However, I don’t use oil, and I put in the lime zest and cilantro in before cooking. The lime zest flavor really gets infused into the rice much better than when I previously cooked it on the stove top or a rice cooker. I serve with lime wedges for individualized taste and more fresh cilantro.

Made this last night with dinner. My toddler and husband loved it and had seconds. I did leave out the lime juice, replaced with Herdez salsa verde because of citrus allergies. Awesome recipe and so easy!

When you say 2C rice am I supposed to use the cup measurer that came with my IP or my regular cup measurer? I just made it and used the IP cup and the rice is sticky.ย

Made this for a ย family get together with Korean flank steak. Everyone loved it and asked what was in it.
Found your recipe on Pinterest!! I have a Quick Cooker from Pampered Chef(their version of a pressure cooker) and I made a Salsa chicken on bottom of Pot and added the rack and used the ceramic pot accessory also from Pampered Chef. And I was able to make the rice separately. The rice is delicious and paired perfectly with the salsa chicken!!ย

I have made cilantro rice a lot on the stove top so really excited to try my instant Pot. BTW…I have the 3 Qt. Hopefully this quantity isn’t to o much for that size. Can’t wait to see how it turns out!

Hi there, thanks for sharing this recipe! The rice came out extremely gummy even though I followed the recipe exactly. You might want to add in the instructions to rinse the rice – I checked out some other recipes and thatโs what they suggested.
I may have missed it but I didn’t see a serving size on the nutritional facts…
Came out way too wet.
Iโve always seen a 1:1 ratio of rice to water for the instant pot. This one seems to have more liquid than that. Thatโs probably why it came out too wet?

Iโve made this 2 times in the past 3 weeks. I used jasmine rice (not sure if itโs different from long grain) and followed all other recipe directions. The cooking and resting times were perfect. Not sure why others found the rice to be watery. (Altitude?) The consistency of the rice was light and fluffy. My husband loves the cilantro lime flavor combination. Needless to say…this recipe is a keeper. Thank you!

All other recipes all for same amount of rice and liquid. Should this be 3 cups of rice?
This was very good and quick to make.
Others have commented about the rice being too wet. I reduced the vegetable broth to 1.5 cups and the water to 0.5 cups. I substituted olive oil for canola oil. And instead of using the rice setting on my Instant Pot, I set it to high pressure and 7 minutes (instead of 12) plus a 5 minute quick release. The rice was good, a little gummy but not too much. And very flavorful.
I only used 2 tablespoons of lime. My rice function never cooks rice the way I like so I put it on 9 minutes manual followed my 3 minutes slow release then fully vented. Came out perfect!

Delicious. Followed the recipe and they came out perfectly. No leftovers. I wonder if the problem experienced by the other reviewers is the “Rice” setting on the IP?
This is the main way I make rice now if I don’t want plain rice. Occasionally will sub lemon for lime or add parsley in addition to cilantro. Have to adjust ratios of citrus sometimes (usually add more). Sometimes make this in a rice cooker, mostly with success. Also sometimes add chopped grape leaves at the beginning for Mediterranean meals. Thanks for the recipe!
