Grilled Fajita Chicken
Updated March 26, 2019
On Saturday we had some friends over for a cookout. It was our first cookout of the season and the weather was perfect. It was nice to enjoy our new patio with good food and friends. Josh took the lead and made Grilled Fajita Chicken. We served the chicken with Bush’s Black Bean Fiesta Grillin’ Beans. They were the perfect side to the fajita chicken.
Josh created a spicy fajita seasoning to marinate the chicken. He cut up peppers and onions to go with the chicken. He grilled up the chicken, peppers, and onions and then served a piece of chicken with the veggies on top.
We served Black Bean Fiesta Grillin’ Beans, grilled pineapple, and salad with the Grilled Fajita Chicken. Everyone enjoyed the meal. It was nice to be outside. I love grilling season!
If you are grilling out for Memorial Day next Monday, give Grilled Fajita Chicken. It is the perfect summer bbq meal.

Grilled Fajita Chicken
Ingredients
- For the fajita seasoning:
- 2 tablespoons chili powder
- 1 teaspoon garlic powder
- 1/2 teaspoon cayenne pepper
- 1 teaspoon cumin
- 1/4 teaspoon cocoa powder
- 1/4 teaspoon salt
- 1/2 teaspoon black pepper
- Juice of 2 large limes
- 1/4 cup water
- 1 teaspoon corn starch
- 8 small chicken breasts seasoned with salt and pepper
- 1/4 cup chopped green onion
- 5 large bell peppers use a mix of colors, cut into strips
- 2 small red onions cut into strips
Instructions
- 1. In a small pan, mix together fajita seasoning ingredients. Heat over medium low until hot. Let seasoning cool to room temperature. Pour seasoning over chicken breasts, reserving a little of the seasoning for the peppers and onions. Sprinkle chicken with green onions and let marinate for 30 minutes. Toss the peppers and onions with remaining seasoning.
- 2. Preheat the grill to high heat. Place the chicken directly on the grill. Cook each side for about 6 minutes, depending on the thickness of your chicken breasts. While the chicken is cooking, grill the onions and peppers on a grill pan. Grill until vegetables are tender.
- 3. Serve chicken breasts with pepper and onions. If desired, serve Bush's Black Bean Fiesta Grillin' Beans on the side.

What a great summer dinner with friends! I really want that grilled pineapple on the corner of your plate:-)
What a fun dinner… nothing more summery than grilling!
Everything looks AWESOME. How amazing is grilled pineapple? Peaches are also pretty rocking. Glad you guys had fun. And what a perfect way to try out the new patio!!
oh, this reminds me we need to get more propane for our grill! we prefer charcoal, but in a pinch the propane works amazingly ๐
LOVE fajitas! They look colorful and absolutely delicious!
So pretty and colorful. My favorite kind of meal ๐
The colors actually pop! I can imagine how great it all tasted.
Delicious and beautiful, too! Love all the different colored peppers. Makes a happy plate ๐
What a nice, simple meal on the BBQ. I would have added mushrooms but that’s probably the vegetarian in me. Love grilled pineapple especially if it gets a little brown and crunchy. Add a little vanilla yogurt on top; nothing better.
Guess what I already had thawing in the refrigerator? Mmmmhmmm….chicken strips. Fate? I believe so.
Also, I LOVE black beans. I bet the Bush’s ones are amazing. I will definitely be trying them out!!
love the recipe and those brightly colored peppers! yum!
I love this kind of food. LOVE!
That plate of veggies looks amazing!
Yummy! Colorful and so enjoyable.
Cheers,
Rosa

Love all the spices your hubby put into his fajita seasoning – you’re so lucky he cooks! And those colorful vegetables make the dish!
The grilled fajita chicken sounds like a great way to kick of the grilling season. Saturday was such a beautiful day here and I’m looking forward to more of that weather.

Sounds like an amazing night with friends and great grilling too ๐
Yum! Now all we need is an actual grill–can you believe my husband gave ours away when we moved from Kansas!!! sigh (He wants something bigger and better, but I tried explaining to him that until then, we have nothing!) He bought a little indoor grill pan to get by.
This meal looks great! Now back to more rain! ๐ Saturday WAS awesome though.
I hope you get a grill soon!! If not, come on over:)
Yum! This sounds perfect.
What a simple and delicious looking meal! I’ve got to give this a try this grilling season – It looks so scrumptious to pass up. ๐
* sorry, I meant “too” scrumptious to pass up!
The seasoning sounds tasty. I’m always looking for new ways to flavor chicken.
Moroni Turkey on the grill is INCREDIBLE! And a little BBQ Corn on the Cob does my taste buds good! I am now drooling! I think I need to get working on that! Have you ever tried BBQed Fruit? I wonder what that is like!
Looks sooo good! Can’t wait to see you in a month or so
We are grilling like crazy already and this look fabulous. I love all the pretty colors in this recipe!

My hubby just saw this walking by and said “those peppers look awesome!” I’m totally making this for him. Those peppers do look awesome! I need to get a veggie rack like that!
I actually sauteed peppers and onions in a pan this weekend and used the leftovers with hummus in a flat out wrap today. Yummy!

I absolutely love fajitas but have never tried them on the grill. That might be my task of the summer! Your grill looks so pretty with everything on it ๐
Maria – love your new design, so nice, clean and fresh looking!
Yummy Maria! Looks so colorful and gorgeous!
Gorgeous meal, Maria!
I thought I made the best fajita marinade, but with cocoa in the mix, you clearly win! Then again I use tequila, so maybe it’s a tie ๐
Looks like a cookout I’d like to come to! Great idea… I may have to borrow it soon!
Love the colors! Such a pretty meal.
