Brie is such a delicious cheese. I love eating it plain with fresh baguette slices, but when served warm, it is extra special. I love making baked brie and pear brie flatbreads during the holidays, but during the summer months, this easy grilled brie is my favorite.

Grilled brie has a wonderfully rich and creamy flavor with a slightly smoky undertone. and it’s SO easy to make.

When you grill brie, the outer layer becomes a bit crispy and golden, while the inside melts into a luscious, gooey texture. The heat intensifies the cheese’s buttery notes and brings out its earthy, nutty qualities.

I like to top the warm brie with juicy peaches, chopped candied pecans, fresh basil, and a drizzle of sweet honey. It’s a delightful combination of creamy, savory, and sweet. This brie recipe has it ALL!

Ingredients

  • Brie– use an 8 oz wheel of soft-ripened brie cheese. Make sure it is cold, right out of the fridge, before grilling.
  • Olive oil– for brushing the brie.
  • Honey– for drizzling over the brie.
  • Peaches– look for ripe and juicy peaches. I don’t peel the peaches, but you can before dicing them.
  • Candied pecans- my homemade candied pecans are SO good with this brie.
  • Herbs– fresh basil or mint!
  • Flaky sea salt– for sprinkling on top!
  • Crostini or crackers– for serving.

How to Make Grilled Brie

  • Preheat grill or grill pan to medium high heat.
  • Brush the olive oil over both sides of the brie.

  • Place the brie on the grill and grill for 2 to 3 minutes per side or until the brie feels warm and soft on the inside. When flipping the brie, use a spatula, being careful to not break the brie open. Make sure to not overcook the cheese, as it can melt too much and lose its shape.

  • Transfer the brie from the grill to a platter.
  • Drizzle the warm brie with 1 tablespoon of honey and top with diced peaches, candied pecans, and mint or basil.
  • Drizzle with the remaining honey and a sprinkle with a little sea salt.
  • Serve the brie with crostini, crackers, or baguette slices.

Variations

  • Fruit– instead of using peaches, try diced nectarines, pears, plums, or strawberries. You can also top with fresh raspberries, blackberries, blueberries, or a mixture of berries.
  • Nuts– I love using candied pecans for a sweet sugary crunch, but regular pecans, walnuts, pistachios, or almonds also work well.
  • Herbs– mint, basil, thyme, and rosemary are all good options! You can even mix herbs.
  • Hot Honey– if you want a little kick, use hot honey instead of regular honey.
  • Balsamic Glaze– instead of honey, drizzle with balsamic glaze.
