My Twist on the Viral Green Goddess Salad

One of my favorite salads is a version of the Green Goddess Salad that went viral on TikTok and Instagram. It was everywhere and for good reason. I tried it and loved it, BUT I created my own version and I think my tweaks make it even more irresistible.

It’s bright, creamy, and filled with crunchy goodness. Whether you’re prepping for the week ahead or looking for a quick, satisfying meal, this salad is perfect! It’s also a great side dish for potlucks, parties, and barbecues. It’s simple to make and always a crowd pleaser.

The base of this salad is a combination of shredded cabbage, diced cool cucumber, and sliced green onions. I like to use cabbage because it’s crisp, crunchy, and holds up well in the fridge, even after a few days.

I love adding pepitas (roasted pumpkin seeds) to the mix. They provide an extra pop of flavor, with a touch of nuttiness and crunch that pairs perfectly with the fresh vegetables. Plus, they add a boost of protein, healthy fats, and magnesium.

I also add in a little creamy feta cheese to bring a salty, tangy depth to the salad. It’s optional, but it elevates the salad. If you’re looking to keep things dairy-free, feel free to leave it out or swap it for a dairy-free cheese option.

How to Make Green Goddess Salad

Let’s get down to business, it is salad making time! In a large bowl, combine the shredded cabbage, cucumber, green onions, avocado, pepitas, and feta cheese. Look at all of that green, so inviting!

The Green Goddess Dressing is a creamy, herb-infused sauce made with Greek yogurt, fresh parsley, basil, and chives, paired with lemon juice and vinegar for a tangy kick. It’s rich yet light, with a vibrant, herby flavor that perfectly complements the salad.

And don’t worry, it’s super easy to make. Put all of the ingredients in the food processor and blend!

The dressing is easy to customize too! Feel free to play around with your favorite fresh herbs. Check out my Green Goddess Dressing recipe! It adds SO much flavor to this salad.

Pour the creamy green dressing over the salad and toss to coat evenly. Taste and adjust seasonings, if necessary.

I highly recommend serving the salad with chips. Yes, chips! It might sound odd, but trust me here. The crunchy, salty chips complement the crisp freshness of the salad, creating a delightful contrast. You can use tortilla chips, pita chips, or even potato chips!

One of the best parts of this salad is how well it holds. The cabbage and cucumbers won’t wilt or get soggy, even after a few days in the fridge, which makes it perfect for making ahead for lunch or dinner throughout the week.

If you know you are meal prepping, you can also store the dressing separately, it will keep in the fridge for up to 5 days. Add it when you are ready to eat! You can also wait to add the avocado for optimal freshness.

Green Goddess Salad Recipe

Ingredients
  

For the salad:

  • 1 small head green cabbage, finely chopped (about 6 cups)
  • 1 English cucumber, finely chopped (about 2 cups)
  • 4 green onions, sliced
  • 1 to 2 avocados, diced
  • 1/2 cup crumbled feta cheese, optional
  • 1/2 cup pepitas
  • Chips or crackers, for serving, optional

For the Dressing:

Instructions
 

  • In a large bowl, combine the chopped cabbage, cucumbers, green onions, avocado, feta cheese, and pepitas.
  • Pour the dressing over the salad and toss until the salad is well coated. I like to serve with chips (tortilla, pita, or potato) for dipping!

Notes

Storing: Store the salad in an airtight container in the fridge for 3 to 4 days. The dressing will keep in the fridge for up to 5 days. If you are meal prepping, you can keep the dressing separate until ready to eat. I would also wait to add the avocado for optimal freshness. 
Variations: You can leave out the feta cheese. Instead of pepitas, try chopped pistachios or almonds. Garnish with fresh herbs!
