Grapefruit, Orange, and Avocado Salad Recipe

It is going to be a sunshine weekend. Tomorrow we are going to do a lot of yard work. I am looking forward to planting flowers in our widow boxes and flower beds. I think we will wait one more week to plant our garden, just to be safe. Utah weather is tricky, but I am hoping we are done with snow for a long time.

When the weather warms up, we like to create light and easy salads for lunch and dinners. We love making this grapefruit, orange, and avocado salad. It is simple and bursting with flavor. I love the contrast of the tart grapefruit with the sweet orange slices. The avocado adds a nice creaminess to the salad. For the dressing, I just squeeze a little bit of fresh grapefruit juice and orange juice over the salad, but feel free to use your favorite dressing. Josh also likes to add feta cheese to his salad.

This tangy and refreshing salad is perfect for any spring or summer meal.

Grapefruit, Orange, and Avocado Salad

Ingredients
  

  • 4 cups Romaine lettuce chopped
  • 1 large grapefruit peeled and sliced
  • 1 large orange peeled and sliced
  • 1 avocado sliced
  • Feta cheese if desired

Instructions
 

  • On a serving platter or 4 small plates, arrange the romaine lettuce. Top the lettuce with the grapefruit, orange, and avocado slices. Squeeze fresh grapefruit juice and orange juice over the top, or use dressing of your choice. Sprinkle with feta cheese, if desired.

  12. Very pleasing colorful salad photos you have here. Grapefruit and avocado are I think one of those natural food pairings, and oranges is a nice addition.
