Fajita Quinoa Bowls
Updated March 26, 2019
Fajita Quinoa Bowls-veggie fajitas, quinoa, and all of your favorite fajita toppings in one bowl! Love this easy and healthy one bowl recipe!
When I go out to eat at a Mexican restaurant I almost always order the veggie fajitas. I love them, but I don’t like how they make a scene. When they bring the fajitas out everyone in the restaurant stares because they want to see who ordered the sizzling fajitas. I am not one who likes any extra attention. I also hate how the fajitas take up the entire table. The hot skillet plate takes up a ton of room and then you have all of the toppings and tortillas. There is no room for anyone else or anything else at the table…and I especially don’t like it when the waiter or waitress tries to take away my chips and salsa to make room. Not a smart move. I need my chips and salsa!
I decided to solve the fajita problem by making Fajita Quinoa Bowls at home. That’s right, everything is in ONE bowl. There is no need for a big show or table. All of the goods are in one bowl!
Fajita Quinoa Bowls are easy to make and fun to eat. There are a lot of fun colors and flavors going on.
For the veggie fajita bowls, I use yellow, green, and red bell peppers. I also toss in some red onion and mushrooms. I spice things up with Old El Paso’s Fajita Seasoning and let the veggies sizzle. A bonus to making fajitas at home? The only person who was staring at me was Maxwell and I am ok with that. Those big baby blues are welcome to stare at me anytime:)
I think Maxwell wanted a taste though. I don’t blame him. Look at those beautiful, vibrant fajitas!
To create my Fajita Quinoa Bowls, I made Cilantro Lime Quinoa. It’s my fave! I put the veggies, quinoa, black beans, avocado, lettuce, tomatoes, and a squeeze of fresh lime juice in one big bowl. So fresh and tasty…and all for me! I love that I didn’t have to share my bowl…even though Maxwell was begging for a bite. Someday I will let him have a taste:)
These Fajita Quinoa Bowls are super customizable too! Feel free to add your favorite toppings! They are perfect for a quick and easy meal or would be fun to serve at a party!
If you are a fajita fan, you have to try my Fajita Quinoa Bowls. You get all of the fajita goodness, without all of the fuss! It’s all about the bowl, baby!
Fajita Quinoa Bowls
Ingredients
- 1 tablespoon olive oil
- 1 red or yellow onion cut into thin rounds
- 1 red bell pepper seeds removed and thinly sliced
- 1 green bell pepper seeds removed and thinly sliced
- 1 yellow bell pepper seeds removed and thinly sliced
- 8 oz mushrooms wiped clean and thinly sliced
- 1/2 cup water
- 1 packet of Fajita Seasoning
- Juice of ½ lime
- 1/4 cup chopped fresh cilantro
- 1 15 oz can black beans, drained, rinsed, and heated
- Cilantro Lime Quinoa
- 2 large tomatoes diced
- Romaine lettuce washed and chopped
- 2 avocados sliced
- Fresh lime juice for squeezing over bowls
Instructions
- Heat a large skillet or cast iron pan over medium-high heat. When the pan is hot, add the olive oil. Add the onions and peppers and cook until tender, about 5 minutes, stirring frequently. Add the mushrooms, water, and fajita seasoning. Stir until seasoning mixes in. Add the fresh lime juice, cilantro, and cook until the mushrooms are tender. Remove from heat and set aside.
- To assemble the fajita bowls, fill bowls with fajita veggies, black beans, cilantro lime quinoa, tomatoes, lettuce, and avocado slices. Squeeze fresh lime juice over the bowls and serve.
- Note-if you can't find fajita seasoning you can use taco seasoning. You can serve tortillas on the side, if desired. If you don't need the bowls to be vegan, feel free to add cheese, sour cream/Greek yogurt! You can also add chicken or steak to the mix! Go crazy and customize your bowls!

That’s my go to a Mexican restaurants too! I love the idea of putting it all in a bowl! And adding quinoa must make it more delicious (and healthier too!).
Gorgeous presentation, love these. Have a bag of quinoa in the pantry, such a beautiful healthy meal. Time to dust off that super hero cape, might be needing it after making these. (Thanks!)
Maria, now try order fajitas on your birthday at a Mexican restaurant and there will also be a mariachi band at your table! Haha. I am in love with this idea. It’s bright and healthy. Nothing like Mexican flavors without the big show.
These look SO good, Maria! Mexican-flavored dishes are always a hit in my house, so this would be a great way to convince my little guys to eat some quinoa (well, I’ll still have to work on my Big Guy!). Yum!
Mexican food is always popular in my home, so this easy dinner would be a huge hit!
This bowl is RIGHT up my alley!! I’m all about any Mexican-style food and love that this involves quinoa ๐
What a tasty quinoa bowl!
I love bowls like this!!
Funny you say that you don’t like them to make a scene at a restaurant – that is my #1 reason that I don’t order them either!!
You can order your fajitas plated, then you don’t have to deal with the annoyed looks. ๐
Love healthy, simple meals where everyone can throw their own ones together!!
This looks like it’s going on the menu here…perfect veggie fajita bowl…I don’t mind the extra attention when the fajitas come out…I figure they’re just watching the food…but I’m with you…don’t take my chips when the food arrives…pull up an extra table if you need to, but the chips are staying.
These look so good! I bet they would be good with brown rice also if you don’t have quinoa on hand. Love all those bright colored veggies! I am with you…. I don’t want all that attention at the restaurant either ๐
I Love fajitas!- these look so great!
What a simple and great idea!
These look delicious! I love Mexican and quinoa!
Maria you cracked me up about the chips and salsa! I don’t like when they take them away either. Love this idea- on the dinner board!

This was delicious, thank you! I think I’ll add a bit more lime and seasoning on the next round, but it was quite tasty and filling.
