Cucumber Noodle, Watermelon, and Feta Salad
Updated October 03, 2023
Cucumber Noodle, Watermelon, and Feta Salad-this cool and refreshing salad is a great summer side dish! Make for your next picnic, BBQ, or pool party!
Watermelon is probably my favorite thing about summer. I have to eat watermelon every day. If we run out, Josh knows he is going to the store. I HAVE to have my watermelon. I like it sliced, cubed, balled, and sometimes I just take a spoon to the melon. Sometimes I make a big juicy mess, but that is all part of the fun.
I am currently loving my watermelon in this Cucumber Noodle, Watermelon, and Feta Salad. It is the perfect summer salad.
Cucumbers and watermelon go so well together. They are both cool, refreshing, and their colors look so good together. The colors are bright, beautiful, and will make you love the salad even more!
For the salad, I spiralize the cucumbers. Our boys eat their veggies better if I spiralize them and the cucumber noodles are so pretty in this salad. I add watermelon cubes, crumbled feta cheese, mint leaves, and a squeeze of fresh lime juice.
This salad is so fresh and will instantly cool you down. So when you are feeling hot, hot, hot and craving something cool, healthy, and delicious make this Cucumber Noodle, Watermelon, and Feta Salad. It is a summer staple!
What Bowl is Best for Serving Salad?

Hi Maria,
My hubby is a huge fan of watermelon as well and it’s a must every summer.
Thanks for the easy recipe, which reminds me that I don’t use my spiralizer enough!! 😀
Amy
I love that you spiralized the cucumber!!
Great combination – so fresh and light!
This salad is STUNNING, Maria! I’m in love with the colors together!
This looks like art Maria!

This is a MUST. It’s gorgeous with the spiraled cucumber!
I’m looking forward to making this salad soon! Yum!
I have been eating a lot of cucumbers and a lot of watermelon, but not together. I think it’s time for that to change. This looks so refreshing.
The combo is amazing! Enjoy!
Ohhh my gosh! The salad looks so stunning and fresh! Best choice for hot summer days! Thank you for your specific tutorial.
This is the best dessert ever!! This post absolutely rocks!! Spiraled cucumber makes it more beautiful!! I wonder if I can put butter into it instead of cheese. I don’t like cheese much since I was young :/ Nice refreshing salad for summer!! The combination of cucumber and watermelon sounds great in this dessert!
have loads of mint cant wait to try
Yum! This looks so refreshing and perfect for summer!! 🙂
My husband doesn’t like feta. What’s a good substitute?
Queso fresco or goat cheese would work well!
Such gorgeous photos! Lovely salad. I’ve been adding watermelon to salads this summer too, and recently made an arugula, watermelon and avocado salad. I love the sweetness and texture it adds.
that dish is very suitable for me (I am on a diet) !! thanks for your recipe
Maybe it’s just me, but none of there flavors went together. It wasn’t bad or inedible, but it was great, and I would not make it again. 2 stars.
Wasn’t great, sorry for the typo
I wasn’t in the mood for watermelon soup, but craving the ingredients! Great alternative when you want to bit into something- thank you
Mint on the side? Will the salad be boring? Not all like mint in my house.
You can leave out the mint if you don’t like it. It does add great flavor!
The salad looks so stunning and fresh! Best choice for hot summer days! Thank you for your specific tutorial.
I am a watermelon lover and especially in the summer. Because watermelon can cool the body when stored in the refrigerator for a few hours, I have had a great drink for the summer. Thanks for your guidance, I can use it for my whole family.
Wow. This looks healthy and delicious. My kids will love this much. Thanks for the recipe.
This is such an easy and wonderful recipe! I’ve made it several times and have passed it on to friends. Everyone loves it!
This is a great summer recipe, watermelon has high water content and it keeps you hydrated and also feta is a great cheese on its own, but when you combine it with watermelon it makes a great combination.
Will this freeze okay? I’m planning to meal prep it for the week.
Unfortunately, I don’t recommend freezing cucumber and watermelon. They will be mushy when they defrost.
Any tips for adding protein to this?
Who knew you could spiralize cucumbers?? Thank you for this outstanding recipe. Sounds like lunch today.
