Cinnamon Roasted Almonds

I am not a huge fan of shopping, especially during the holidays when the stores are packed with people.   I do most of my shopping online. The one thing I miss is the smell of the roasted almonds from the little cart in the middle of the mall, you know the one I am talking about, right? I love that smell! I didn’t want to miss out on my favorite holiday smell, so I created my own cinnamon roasted almonds at home this year.

I don’t know why I haven’t made these before. They are so easy and the perfect holiday “perfume” for your house. They roast in the oven for about an hour-you can wrap presents, decorate the tree, hang the stockings, or just relax with your favorite holiday film while they roast. Don’t go too far though, they need to be stirred every once in awhile.

Give Cinnamon Roasted Almonds as a gift this year-package them in tissue paper or a little bag and tie them up with pretty ribbon. Almonds are good for you and make the perfect snack.

Cinnamon Roasted Almonds

  • Preheat your oven to 250 degrees F. Beat the egg white and water until frothy with a whisk in a medium bowl. Add the almonds, and stir until well coated. Mix the sugars, salt, and cinnamon, and sprinkle over the nuts. Stir the nuts until they are well coated. Spread the almonds evenly on a baking sheet that has been lined with parchment paper or a Silpat.
  • Roast the almonds for 1 hour, stirring every 20 minutes or so. Your house will smell amazing!
  • Allow to cool, then store in airtight containers.

  2. YUM! These look fantastic. They’re inspiring me to make my own honey sesame covered cashews (since we’re almost out of the ones we got from TJs over Thanksgiving in Nashville!!). The malls freak me out around Christmas! I try to get all my shopping done at least two weeks before if I can. Hope you’re having a good week.

  6. Cinnamon Roasted Almonds are the BEST! As a child I would get my winter stash from my ‘adopted grandmother’ (next door neighbor). Then as a college student working in the malls during the holidays they would have the kiosks set up making them. The aroma is fantastic! Have not had them in a long while. Perhaps something to try this weekend! Cheers!

  17. I love those roasted nuts. Actually it is my cousin who does the Totally Nutz in the malls in SLC every Christmas season. It is such a great job for them. They work tons of county fairs for 3 months in the summer and a few weeks in the winter. The rest of the time they get to enjoy life. Thanks for the recipe. I’m going to give it a try.   29. Made these this week… YUM! Even better… I used them to make homemade cinnamon almond butter. I processed them in the food processor with a little maple syrup and a little canola oil. SO good. On toast, it works like dessert!

Imagine my dismay when I discovered her “recipe” was not in the box. In fact it was no to be found any where in the house. Upon making them I discovered these taste EXACTLY like hers!!   33. I made these the other night–they taste just like the almonds that they sell at fairs, sporting events, etc., and then package in those pink and purple paper cones. These are phenomenal!
