Homemade salad dressings are the best and SO easy to make. A few of my favorites include: basil vinaigrette, balsamic vinaigrette, creamy cilantro lime dressing, and Caesar dressing.

I also LOVE this Cilantro Lime Vinaigrette. The flavors are fresh, robust, and the color is bright green, which just happens to be my favorite color.

If you love my creamy cilantro lime dressing, I know you will love this one too. This cilantro dressing is dairy-free and vegan and has amazing flavor!

You only need a handful of ingredients and a blender (or food processor) to whip up this flavorful dressing! It only takes 5 minutes to make and you can keep it in the fridge for up to one week.

Drizzle it over your favorite salads! It is especially good with my Southwest Quinoa Salad. It is also great with grilled chicken, fish, steak, tacos, and more! If you like cilantro, I guarantee you are going to love this simple vinaigrette!

Ingredients

  • Cilantro– remove the stems and pack the leaves into a measuring cup. You will need 2 cups. Buy 2 bunches to be safe.
  • Shallot– you can find shallots in the produce section by the garlic. A small shallot is fine.
  • Garlic
  • Lime Juice– always use fresh lime juice, not bottles.
  • Red wine vinegar
  • Oil– you can use olive oil or avocado oil.
  • Kosher salt and black pepper– to taste!

How to Make Cilantro Lime Vinaigrette

  • In a blender, combine the cilantro, shallot, garlic, lime juice, red wine vinegar, oil, salt, and pepper.
  • Blend the dressing until smooth. It will be a vibrant green color!
  • Taste and add more salt and pepper, if necessary. If you want more lime flavor, you can always add an extra squeeze of lime juice too!

Serving Suggestions

Use this dressing to top your favorite salads. A few of salad recipes that pair well with this dressing are: Steak Salad, Taco Salad, Charred Corn & Avocado Quinoa Salad, and Fresh Corn Salad.

Ingredients
  

  • 2 cups cilantro, packed and stems removed
  • 1 shallot, minced
  • 1 clove garlic, minced
  • 1 tablespoon lime juice
  • 1 tablespoon red wine vinegar
  • 1/2 cup olive oil or avocado oil
  • Kosher salt and black pepper, to taste

Instructions
 

  • In a blender, combine the cilantro, shallot, garlic, lime juice, red wine vinegar, oil, salt, and pepper. Blend until smooth.
  • Serve as a salad dressing or drizzle over fish, chicken, or veggies!

Notes

The dressing will keep in a jar or airtight container in the fridge for up to 1 week.

    I made the dressing for the zucchini corn salad and while the whole meal was delicious, this dressing blew my mind. Lick-the-bowl-clean delicious and so easy to make. I canโ€™t wait to try it in other dishes.
