Chocolate Pudding Cookies with Mini Robin Eggs

Easter is on Sunday and I am excited. Easter has always been one of my favorite holidays. When I was little, I loved picking out an Easter dress, dying eggs with my siblings, hunting for eggs, and eating Easter candy. I don’t pick out a frilly dress and bonnet anymore, but I still enjoy the holiday-especially the Easter candy. There are so many fun varieties of Easter candy. Josh brought home a bag of Mini Robin Eggs-the malted milk eggs with a colorful candy coating. I ate a few and then decided to make a batch of Chocolate Pudding Cookies with Mini Robin Eggs.
I love pudding cookies. This time I went with chocolate. The pudding kept the cookies soft and added a nice chocolaty flavor. I also stirred in milk chocolate chips and chopped up Mini Robin Eggs. The Mini Robin Eggs candy added a pop of color and a nice crunch to the cookies.
If you are looking for a special Easter treat, try Chocolate Pudding Cookies with Mini Robin Eggs. And if your kids receive too much Easter candy, make cookies with the leftover candy. Everyone will enjoy these cookies.
Chocolate Pudding Cookies with Mini Robin Eggs
Ingredients
- 1 cup unsalted butter at room temperature
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 1 3.4 oz. package chocolateย instant pudding mix
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup milk chocolate chips
- 1 1/4 cups Mini Robin Eggs colored malted milk Easter candy, chopped
Instructions
- 1. Preheat oven to 350 degrees F. Line a baking sheet with parchment paper or silicone baking mat and set aside.
- 2. Using a mixer, beat together butter and sugars until creamy. Add in chocolate pudding mix, eggs, and vanilla extract. Mix until smooth.
- 3. In a medium bowl, whisk together the flour, baking soda, and salt. Add the dry ingredients to the wet ingredients and mix until just combined. Stir in the chocolate chips and Mini Robin Eggs.
- 4. Drop cookie dough by rounded tablespoons onto prepared baking sheet. ย Bake for 10-12 minutes, or until cookies are set. The middles will not be completely done. Remove cookies from oven and let cool on baking sheet for 5 minutes. Transfer to a cooling rack and cool completely.
- Note-if you can't find Robin Eggs, you can use malted milk balls.

Chocolate pudding cookies have been a long-treasured cookie recipe in my box. Every time I make them they make people happy. I have dressed them up with PB chips and nuts and such, but I think some Easter Candy would be even more perfect.

Most of the time, I can turn down candy, but those malted milk balls are my total weakness. I buy bags of them every year just I can have some after the holiday is over. What a great idea to make cookies with them!

I made these for Easter Sunday, but was unable to locate either mini robin eggs or malted milk balls. So, I used Reese’s pieces mini-eggs and they were a hit! Thank you so much for sharing this great recipe!

Okay, so I made these the other day and they sure didn’t last very long! ๐ They’re fantastic! The next day, all I did was re-heat it (because I love my cookies with melted chocolate ALL the time), and that’s pretty much all I ate the rest of the day. lol No, really. I’m sure my doctor wouldn’t like that. My hubby was mad that the cookie jar emptied so quickly. He told me I needed to make some so that he could take them to work. ๐ Thanks for the recipe!
Oh, btw….I had a really hard time getting these off of the pan. I guess it’s because of the candy coating. And I don’t think it helped that I doubled the amount of robin’s egg candy either. lol All I had was wax paper, and that didn’t help. I ended up just spraying a pan with cooking spray. It still stuck, but at least I didn’t have to sit there and remove the paper. I need to buy me a SILPAT pronto!

I love these cookies! The first time I made this recipe, I used cheesecake pudding and Easter M&Ms for easter cookies and they were wonderful!
Are these supposed to be made with pudding mix still dry and powder, or made into pudding? I’m baking them right now, and I used the dry mix, and they turned into a very dry dough that I could handle with my hands and have them come out perfectly clean, kind of like shortbread dough. Is that how it should be?
Just use the dry mix, don’t make the pudding. The cookies shouldn’t be dry. These are probably the softest chocolate chip cookies I make.
