- Unsweetened Cocoa Powder: For a rich chocolatey taste! You can also use Dutch processed cocoa powder also works well for a deeper chocolate flavor. If you want a protein boost, you can also add a scoop of your favorite chocolate protein powder.
- Eggs: Help bind the ingredients together and give the oatmeal a fluffy texture. To make the recipe vegan, use flax eggs. (1 tablespoon ground flaxseed + 3 tablespoons water = 1 egg)

How to Make Chocolate Peanut Butter Baked Oatmeal
- Preheat the oven. Preheat your oven to 350°F and grease a 8×8-inch baking dish with cooking spray. Set aside.
- Mix the dry ingredients. In a large mixing bowl, stir together the oats, cocoa powder, baking powder, and salt.
- Whisk together wet ingredients. In a large bowl, whisk together mashed bananas, milk, peanut butter, eggs, maple syrup, and vanilla. Make sure everything is fully combined.
- Combine ingredients. Add the liquid ingredients to the oat mixture and stir until combined. Stir in ¼ cup of the chocolate chips…or however many you want. Measure with your heart:)
- Pour and bake. Pour the oatmeal mixture into the prepared baking dish and spread it out evenly. Bake for 35 minutes, or until the oatmeal is firm in the center and set.
- Cool. Remove from the oven and allow the baked oatmeal to cool for a few minutes before serving.

Ingredients
- 2 cups old fashioned oats

- 2 large eggs
- 1/4 cup pure maple syrup
- 1 1/2 teaspoons pure vanilla extract
- 1/2 cup chocolate chips, divided
- For serving: drizzle of peanut butter and flaky sea salt, if desired
Instructions
- Preheat oven to 350 degrees F. Grease an 8×8-inch baking dish with nonstick cooking spray and set aside.
- In a large bowl, combine the oats, cocoa, baking powder, and salt. Set aside.
- In a medium bowl, combine mashed bananas, milk, peanut butter, eggs, maple syrup, and vanilla extract. Whisk until combined.
- Add the liquid ingredients to the oat mixture and stir until combined. Stir in ¼ cup chocolate chips.
- Pour the oatmeal mixture into prepared pan and sprinkle with additional chocolate chips. Bake for 35 minutes or until oatmeal is set.

My boyfriend despises the taste of bananas, is there anything I can substitute or is the banana taste really not noticeable?
