  • Rolled Oats: The base of the recipe, offering fiber, vitamins, and minerals for a nutritious breakfast. If you need the recipe to be gluten-free, use gluten-free oats.
  • Peanut Butter: Adds a creamy texture and rich flavor, along with healthy fats and protein. Use natural peanut butter (only peanuts and salt). Stir well before using!
  • Mashed Bananas: The bananas add sweetness and keep the oatmeal moist. For best results, use overripe bananas that are very dark brown.
  • Unsweetened Cocoa Powder: For a rich chocolatey taste! You can also use Dutch processed cocoa powder also works well for a deeper chocolate flavor. If you want a protein boost, you can also add a scoop of your favorite chocolate protein powder.
  • Eggs: Help bind the ingredients together and give the oatmeal a fluffy texture. To make the recipe vegan, use flax eggs. (1 tablespoon ground flaxseed + 3 tablespoons water = 1 egg)
  • Milk: Any milk works, whether dairy or plant-based like almond or cashew milk.
  • Maple Syrup: Use pure maple syrup to sweeten the oatmeal.
  • Chocolate Chips: I like to add chocolate chips to make the oatmeal extra decadent.

How to Make Chocolate Peanut Butter Baked Oatmeal

  • Preheat the oven. Preheat your oven to 350°F and grease a 8×8-inch baking dish with cooking spray. Set aside.
  • Mix the dry ingredients. In a large mixing bowl, stir together the oats, cocoa powder, baking powder, and salt.

  • Whisk together wet ingredients. In a large bowl, whisk together mashed bananas, milk, peanut butter, eggs, maple syrup, and vanilla. Make sure everything is fully combined.

  • Combine ingredients. Add the liquid ingredients to the oat mixture and stir until combined. Stir in ¼ cup of the chocolate chips…or however many you want. Measure with your heart:)

  • Pour and bake. Pour the oatmeal mixture into the prepared baking dish and spread it out evenly. Bake for 35 minutes, or until the oatmeal is firm in the center and set.

  • Cool. Remove from the oven and allow the baked oatmeal to cool for a few minutes before serving.

Serving Suggestions

  • Top with Fresh Fruit: Add sliced bananas, strawberries, or raspberries to complement the chocolate and peanut butter flavors.
  • Drizzle with Extra Peanut Butter: For an extra indulgent touch, swirl a little more peanut butter on top before serving.
  • Flaky Sea Salt: Sprinkle a little flaky sea salt on top to enhance all of the flavores.

How to Store & Reheat
