Chocolate Glazed Oatmeal Peanut Butter Bars

Yesterday we went up to the Dewey/Pennington cabin just east of Kamas, Utah. We had a great time relaxing with the family! It is always a treat to visit the cabin.

Lincoln, Josh, and I went on a hike, Lincoln style…that means a drive:) We did get out to take some pictures and we took a few steps..ha!

The fall colors were so vibrant! I am glad we hit the Aspens at their peak!

I wasn’t excited to see the snow on top of the mountain.
I am not ready for winter!

I made Prudy’s Chocolate Glazed Oatmeal Peanut Butter Bars and everyone loved them. Well, Josh wasn’t allowed to have a taste because of the peanut butter, but don’t worry he didn’t starve. There was plenty of good food up there. The bars were great, how can you go wrong with a peanut butter and chocolate combo? Thanks Prudy!

Chocolate Glazed Oatmeal Peanut Butter Bars

Adapted from Prudence Pennywise

½ cup butter

⅓ cup peanut butter, plus more for spreading on top

½ cup brown sugar

½ cup sugar

1 teaspoon vanilla

2 eggs

¼ cup milk

½ teaspoon salt

1 teaspoon baking soda

1 cup flour

2 cups oatmeal-old fashioned or quick cooking

Chocolate Frosting:

2 tablespoons butter

2 tablespoons milk

2 tablespoons cocoa powder

1 cup powdered sugar

Preheat oven to 375 degrees. In a large bowl, combine butter and peanut butter. Add sugars and mix well. Stir in vanilla, eggs, and milk. Stir in salt and soda, then add flour and oatmeal. Press mixture into greased 9 by 13 and bake for about 20-25 minutes, or until puffed and browned. Spread hot bars with peanut butter-about ½ cup. Let sit for a few minutes while you make the frosting. In a small saucepan, combine butter and milk and heat on low heat until butter is melted. Stir in cocoa powder and powdered sugar. Pour over warm peanut butter and spread gently. Cut into bars and serve.

  1. Your recipes look yummy! Being from Colorado I’ve seen a few Cow Crossing signs (Free Range/Open Range) but I still have NEVER seen any cows on the road!

  22. I love Maria & Josh’s recipes cause they always turn-out delicious. This recipe from what Ive read isnt their own but I made them & thought they were just awful. Im a pretty good baker, but these were not what I hoped for..flavor & texture were way off for me. I will continue to make Maria & Josh’s!
