Yes, I am posting another lime recipe. My Baking Addiction made me do it. When I saw her post that started out with, “Are you a lime lover?” I knew I was in trouble. Especially because it was a cookie recipe.  I tried to ignore the post, but it kept popping up in my mind at the most random times. These cookies were begging to be baked.

Over the weekend, I made a batch and I don’t know if I should love these cookies or hate them. They are DIVINE! So divine that I didn’t want to share. I took one bite and immediately knew I was in big trouble. Josh was outside doing yard work, so the question was-do I hurry and hide the cookies or share my divine discovery?

Josh ended up coming in the house to grab a drink and smelled the cookies. He quickly grabbed a freshly baked cookie from the cooling rack. Of course he loved them. They are soft, chewy, with a hint of toasted coconut, and the perfect kick of lime. What is not to love? Especially for lime lovers, like us.

I could go on and on about how fabulous these cookies are, but instead, go make a batch. You will see! Make them today to end your Cinco de Mayo party with a sweet bang!

Chewy Lime and Coconut Sugar Cookies

We love these soft and chewy sugar cookies. The coconut and lime make them extra special!

Ingredients
  

Instructions
 

  • 1. Preheat oven to 350 degrees. Line cookie sheets with parchment paper or Silpats.
  • 2. In a small bowl, whisk together flour, baking soda, baking powder and salt. Set aside.
  • 3. Using a mixer, beat together the butter and sugar until smooth and very fluffy. This will take a couple of minutes.
  • 4. Beat in the egg, vanilla extract, lime juice and lime zest. Mix until well combined.
  • 5. Gradually add in the dry ingredients and toasted coconut. Mix until combined, don’t over mix.
  • 6. Roll rounded teaspoonfuls of cookie dough into balls. Put sugar in a small bowl and roll cookie dough balls in the sugar. Place on lined cookie sheets about 1 ½ inches apart.
  • 7. Bake 8 to 10 minutes or until lightly browned. The cookies will start to crack a little bit.
  • 8. Let stand on cookie sheet two minutes. Move cookies to a cooling rack.
  • *Note-to toast the coconut-place coconut on lined baking sheet. Bake for 5-8 minutes at 350 degrees. Tossing a couple of times. Remove from oven when coconut is light brown.*

    I didn’t celebrate I’m afraid. I attended a going-away barbecue for a friend and had hoped it might have a few 5/5 festivities – in the form of margaritas, but it was not to be.

  36. These cookies look fantastic. I’m definitely going to try them. Strange question: Do you have any idea what makes a cookie chewy vs. cake like? Is it ingredients? Process?

    1. El-I am guessing the chewiness comes from under baking the cookies a little. You take these out a little early and let them set up for a couple minutes on the cookie sheet. The lime juice might help with the chewiness, but I really don’t know. Good question. Anyone know?

  37. Thanks for the under baking tip. That may be right. I’ve been trying to make a good thin chewy oatmeal cookie for years and have probably tried 25- 30 recipes to no avail. A few people have said corn syrup but that doesn’t seem right. Thank you!

    1. Kath-Yes, you can use sweetened coconut, just toast it and add it in the mix. Let me know if you like them!

  44. Thanks for posting the recipe! Loved the scent of lime, but I’m not sure I would bake these again. They were too soft for my taste (maybe not using an air-insulated baking sheet would help with that!) I substituted lime zest with lime oil and lowered the amount of sugar. I would also add more coconut if I bake them again. Almond extract is usually a nice combo with coconut so I’d probably add some of that too. Oh and using a tablespoon cookie scoop yielded me 50 cookies!!!

  45. Okay, we made these tonight and they were a hit! Not over-the-top lime-tasting at all. I think next time I might roll them in coconut as well as the sugar. I love coconut and can never have enough. But super chewy and a huge hit with the entire family!

  47. I made these this afternoon, and they were delicious! I could barely keep my hands out of the dough, and after I made them, I kept reaching back into the cookie jar. I loved the soft chewiness (when I first took them out of the oven they seemed WAY underdone, but firmed up really nicely after cooling, while keeping their chewy texture) and the subtle coconut lime flavor. I’ll definitely make them again!

    I have been reading your blog for a while. I saw these cookies and I have been meaning to make them for a long time! I finally did it – they are good but I didn’t find the lime taste to be that strong. {I used the zest of 4 limes too] Any tips to fix that? Other than that they were good.

  54. I’ve never considered myself any good at cooking or baking. Usually when I try to make something I end up being disappointed because something went wrong…even when I follow recipes exactly. BUT…I got some motivation to try some new things when I stumbled across your blog. This coconut lime cookie was the first recipe of yours I decided to try. And oh my word….delicious!     Preparation method: Take finely chopped onions in a bowl
    and add yogurt, grated coconut, green chili and salt to taste.
    The final decision to use a roasting method to cook the chicken is a good

    Made these the other day. Excellent LIME cookie. Love the texture, but they lacked the coconut flavor. The lime flavor is great, but I really wanted more coconut flavor. I will make these again, maybe experimenting with coconut butter (or coconut oil) in place of some of the butter.

    I converted this recipe to vegan by using Melt margarine and a flax seed egg.

    The dough was very light. ย  The cookies are tasty. ย I found a full 10 minutes worked best. ย Otherwise they were too soft for the cooling rack, even after 2 minutes on the sheet after baking.

    Also, I rolled them in Demerra sugar, because I had some to use. ย It added a nice look and a crunch!

    Love these cookies….I did some of the cookies according to the recipe, but I found the sugar to be to much….so I frosted some with pd. sugar and lime juice and peel. Excellant.
    Love the chewy bottom and the burst of lime.
