Brown Sugar Butterscotch Cookies-soft and chewy brown sugar cookies with butterscotch chips! A new favorite!

Brown Sugar Butterscotch Cookie Recipe on twopeasandtheirpod.com My new favorite cookie!

I think I have an addiction to chocolate chips. I have a drawer in our freezer that is filled with bags and bags of chocolate chips. I also have bags in my baking drawer and downstairs in our food storage. I buy every kind of chips: semi-sweet, milk chocolate, dark chocolate, mini, cinnamon, white chocolate, peanut butter, mint, butterscotch, and any other speciality chips I can find.

I was going through my stash and found six bags of butterscotch chips. Oops! I guess I got a little carried away. I love butterscotch and decided it was going to be a butterscotch baking day. I was tempted to make my Butterscotch Pudding Triple Chip Cookies or my Pumpkin Oatmeal Scotchies, but I wanted to create a new cookie. I ended up making Brown Sugar Butterscotch Cookies. They are a new favorite! I LOVE these cookies!

Brown Sugar Butterscotch Cookie Recipe on twopeasandtheirpod.com LOVE these cookies!

I’ve made Brown Sugar Toffee Cookies before and they are a favorite at our house. I decided to use the same base recipe, but mix things up by using butterscotch chips instead of toffee. I love toffee so I was a little nervous I wouldn’t like the cookies as much, but I was wrong. I am obsessed with these cookies.

Brown Sugar Butterscotch Cookie Recipe on twopeasandtheirpod.com You HAVE to make these!

I actually wasn’t going to post this recipe since it is so similar to my Brown Sugar Toffee Cookies, but I decided they NEED their own post. They are that good! You HAVE to make these cookies!

Brown Sugar Butterscotch Cookie Recipe on twopeasandtheirpod.com I'm obsessed with these cookies!

The brown sugar cookies are soft and chewy. The sweet butterscotch chips are dotted throughout the cookie and take the cookies from good to GREAT! The brown sugar and butterscotch combo is to die for!

Brown Sugar Butterscotch Cookies are a thing…a very good thing! You need to make a batch. Just be careful, they are dangerous. I think I ate six cookies in one day. I am eating for two though so technically I only had three cookies. I shared with the baby:)

I might have to go back to the store to buy more butterscotch chips. I only have five bags left and I want to make Brown Sugar Butterscotch Cookies every day!

  2. I can’t think of a better addiction to have than to chocolate chips! I mean, if you don’t end up baking with them, they taste really good by the handful! I am loving the combo of brown sugar and butterscotch here….and these pictures are so pretty! I want these chewy cookies pronto! Pinned!

  3. My husband has the same addiction to chocolate chips which means I can’t have them in the house because they will be GONE. Seriously. He’d plow through your stash in no time. ๐Ÿ™‚

These cookies look absolutely perfect. I can see these being a favorite in our house, too.

  4. Butterscotch chips make a cookie look so cheerful. These look delicious. We have ice in Charleston for the first time in….a long time…like we’re covered can’t move. I think baking is a requirement today

  5. I love different variety of chips, however, my Husband only likes semi-sweet. If I mix it up and add different kind of chips, he gets disappointed, so needless to say I have a huge variety of semi-sweet chocolate chips in the house, from every shape and size. Your cookies look out of this world!!

  6. Would these work without the cornstarch? Our family doesn’t eat corn and I haven’t picked up arrowroot to replace it yet.

They sound really yummy and I want to try them!!

  7. LOVE the cornstarch in this! They really do make the cookie so soft!! I adore the brown sugar in these cookies. Butterscotch is such a great pairing too. Love love!!

  8. I love butterscotch chips! These are also good in oatmeal cookies ๐Ÿ™‚ These are beautiful.

  9. I love butterscotch chips, too! I sprinkle them over a hot bowl of oatmeal and they add such a wonderful flavor!

  10. Can I use light brown sugar instead of dark? I bought too much a at Xmas and am lolling for a way to use it. This sounds like a good opportunity! Thanks.

  11. I absolutely LOVE butterscotch flavor. The butterscotch pudding was always my favorite as a kid. ๐Ÿ™‚ I will take the whole stack please!

  12. These sound good but not a big fan of butterscotch. If you are wanting cookies hope that means you are feeling better.

  13. i have about a cup of butterscotch chips that I’ve been wondering how to use up–I think I just figured out how ๐Ÿ™‚

  14. Oh my gosh, I thought I was the only one who has a chip/M&M stashing problem. I seem to alwys feel the need to buy bags when I see them on sale even though I know I have plenty at home. These yummy cookies will give me a very good reason to use a bag ot two very soon. Thanks for sharing

  15. The grocery store just had a huge sale on chocolate chips and I bought about 20 bags! I’ve been trying to think of different ways to use them, besides eating them straight from the bag by the handful, and this recipe looks and sounds delicious! Thanks!

  16. I love butterscotch – it reminds me of when my Dad and I used to make butterscotch pudding together. I also love butterscotch candies – does that make me 75? ๐Ÿ˜‰

  17. I found 6 bags of mini chocolate chips the other day and felt like I needed to hide it from my husband. Glad to know I am not alone in the obsessive stocking of chips.

  18. These look absolutely scrumptious. I will be trying these next time I make cookies. There are times when I wish my husband loved sweets more than he does. I am working on getting him to experience new things. I have found only one sweet I have made that he ate just about the batch all to himself.
I will have to find myself some more friends that like sweets so I don’t end up with too much to each all to myself.

  19. I was looking for a new cookie recipe. I typed in
Chewy cookie and stumbled across your website with
this recipe. Thank you sooooooo much! They are
delicious and I can not bake them fast enough to
    keep in the cookie jar.

  20. My baking cabinet is always well stocked with various flavors of chips. As soon a new flavor hits the shelves, my little paws are reaching for the bags. I just recently made a cookie with butterscotch chips and my family fell in love with them. I love this version! Pinned.

  21. ha – glad I am not the only one with a ridiculous collection of “chips” – I’m afraid to let of them run out because then I want some and the kind I need are all gone – horrors! These cookies look amazing – yum!

  22. Clarification on brown sugar please.I would love to be baking these right now, but I don’t know whether to pack the sugar or not. Thank you.

  23. Hi there, I have made many of your recipes and they have turned out well. I gave this one a try a couple days ago and no success ๐Ÿ™
The balls of cookie dough did not flatten and spread. Instead i ended up with rounded raw mounds. I had to double the baking time so that they would bake through. Good flavor but obviously hard as a rock.
Can you kindly tell me what I should do next time to prevent this??

    1. Sorry you had issues! I am not sure what happened because ours always flatten out nicely and are soft and chewy! Again, sorry!

  24. Hi there! Your recipe was delicious and your blog is super cute! ๐Ÿ™‚ Thanks very much for this awesome recipe!!! ๐Ÿ™‚

  25. I made a batch of these tonight. Delicious but a tad too sweet for my taste, so I’ll try decreasing the sugar next time. Also, these cookies turned out very puffy, even when I tried flattening them before baking. Would decreasing or eliminating the cornstarch help to make this a flatter cookie? I’m still learning about adjusting recipes, but usually yours turn out perfect for me!

    1. Sorry you had a problem with puffy cookies. You can try reducing the cornstarch or the flour, but I make the recipe as is.

  26. These cookies are so yummy! My kids love butterscotch chips. My 7 year old (who loves a soft cookie) said, “These are very enjoyable to my taste buds.” His comment made my day. Thanks for the great recipe. I know we’ll be
    making these again!

  27. These are delicious! I made them today to bring to our friend’s house for dessert. I literally ate 4 before we went there. I told myself I was not going to eat any tonight- oops, I had 2 more. Darn it!!!! So good!

  28. I bake cookies at a Hospice home and made these today, they are fantastic! I didn’t have dark BR. Sugar so used light but WOW, they were a hit. Love your website, keep the recipes coming!

  29. Well. I just made them. BUT I added a bar of chocolate chopped up, pecans and nutmeg. Oh my god. Melt in your mouth better than sex cookies

  30. Just made these and they are amazing!! Great texture and the taste is incredible! I don’t trust myself with them ๐Ÿ™‚

  31. OMGoodness! Found your recipe on Pinterest and these are incredible! We were getting a bit tired of our favs and these were just the different type of yummy-deliciousness me and my family were wanting. Thank you for sharing!

  32. These turned out fabulous- just as beautiful as in your pictures. Crispy sugar on the outside, chewy on the inside, just the right balance of rich sweet and salty. In fact, three turned up missing as I was rolling up the second batch and the kids are silently enjoying their fresh baked loot!

  33. Oh.My.Goodness. I’ve had a couple bags of butterscotch in my cabinet forever- never used them because I just don’t like butterscotch, but LOVE things with brown sugar. This recipe completely altered my opinion- so easy to make and are super chewy and delicious- perfect to celebrate a cold front in July!

  34. Worst recipe, ever!! Tried to make cookies and they were flat and burnt before time was up. Decided it was more of a cookie bar recipe…..nope! Turned into a soup! Waste of time and ingredients .

  35. Hi there, I recently tested out this recipe and the cookie dough was way too dry! any suggestions to help make it stick together more? Thanks in advance!

  36. I used to not like butterscotch chips, but this recipe has made me a believer. These are unbelievable – possibly the best cookies ever! Even the ladies in my office who are normally too committed to their diets to eat more than one cookie had two or three each. Can’t wait to try the toffee ones! Thanks for another amazing cookie recipe ๐Ÿ™‚

  37. dough came out very dry and crumbly for me as well. i added another egg to salvage them. skipped rolling in brown sugar as they were still on the crumbly side. they came out ok, but probably won’t make again.

  38. These cookies are delicious. We did not use corn starch or salt but did use salted butter
They are not too puffy or flat and very yummy!

  39. These cookies are the best cookie ever created! They are my go to cookie. They never disappoint. They are always reliable and taste amazing!! Thank you for sharing this recipe!

  40. This recipe was fantastic! Easy, no bizarre ingredients, and a chewy, crispy, wonderful cookie. I used a tablespoon-sized ice cream scoop to portion, and I came out with exactly 34 cookies. They baked for 13 minutes and came out perfectly. The dough looks very thick at the end. I was surprised that there was no liquid added with the flour, like milk. But they scooped out nicely and ended up perfect!

  41. I was looking for a butterscotch cookie on Pinterest and found your recipe. Oh my, are these amazing. I just took my third cookie sheet out of the oven and have sampled three already. I didn’t have any butterscotch chips so I subbed some chopped white chocolate for those. Will be making often. Thanks for the recipe!

  42. Insane!!ย
By far the best cookie I have made in a long time. 3 minutes out of the oven and it’s a soft, slightly gooey magical experience in my mouth. Do not, I repeat, do not skip the roll in the brown sugar. Genius.ย

  43. These are amazing! I didn’t have butterscotch chips so I just pressed a chocolate chip in the center of each cookie and sprinkled a little bit of salt on top of each cookie and they came out beautifully. Thank you!

  44. These cookies are fantastic!! Super soft and chewy and just incredibly delicious! I used both butterscotch and semi sweet chocolate chips and almost doubled the total amount of chips since I love when cookies are packed full. I will definitely make these again and again!

I picked up some new Hersey’s Sea Salted Caramel Chipits and was looking for maybe a chocolate chip cookie to substitute the Caramel Chips for, and found yours. It came together as expected, no issues. Nothing altered. I did chill the dough before rolling into balls.
Baked perfectly at 10 minutes. Only trouble was waiting for them to cool before consuming.

How would you tweak the recipe to add oatmeal?
(My hubby and friends call these my “crack cookies” because they are so addicting!)

  48. I ADORE butterscotch chips and brown sugar cookies, so needed to say, these were gone in a flash! Will be making some more today!! Kudos!โค

  49. 5 stars
Having a cookie fresh from the oven right now. I was too lazy to roll them in more sugar so that didn’t happen. But, I did use white chocolate chips, Heath chocolate covered toffee bits and some milk chocolate chips. Such a nice texture and wonderful flavor.

I have been meaning to try these for awhile – totally worth the wait! These are delicious! Definitely canโ€™t eat just one!

Delicious! Thanks for a great recipe that is butterscotch. mine were perfectly chewy with a crispy edge. I have a theory for those indicating dough too dry-perhaps note to not scoop flour but do the spoon filling technique for flour. I also rolled some in white sugar with a bit of salt; still very much butterscotch but cut some sweetness that others mentioned. Personally, I like your brownsugar roll best!
