Brown Sugar Butterscotch Cookies-soft and chewy brown sugar cookies with butterscotch chips! A new favorite!
I think I have an addiction to chocolate chips. I have a drawer in our freezer that is filled with bags and bags of chocolate chips. I also have bags in my baking drawer and downstairs in our food storage. I buy every kind of chips: semi-sweet, milk chocolate, dark chocolate, mini, cinnamon, white chocolate, peanut butter, mint, butterscotch, and any other speciality chips I can find.
I was going through my stash and found six bags of butterscotch chips. Oops! I guess I got a little carried away. I love butterscotch and decided it was going to be a butterscotch baking day. I was tempted to make my Butterscotch Pudding Triple Chip Cookies or my Pumpkin Oatmeal Scotchies, but I wanted to create a new cookie. I ended up making Brown Sugar Butterscotch Cookies. They are a new favorite! I LOVE these cookies!
I’ve made Brown Sugar Toffee Cookies before and they are a favorite at our house. I decided to use the same base recipe, but mix things up by using butterscotch chips instead of toffee. I love toffee so I was a little nervous I wouldn’t like the cookies as much, but I was wrong. I am obsessed with these cookies.
I actually wasn’t going to post this recipe since it is so similar to my Brown Sugar Toffee Cookies, but I decided they NEED their own post. They are that good! You HAVE to make these cookies!
The brown sugar cookies are soft and chewy. The sweet butterscotch chips are dotted throughout the cookie and take the cookies from good to GREAT! The brown sugar and butterscotch combo is to die for!
Brown Sugar Butterscotch Cookies are a thing…a very good thing! You need to make a batch. Just be careful, they are dangerous. I think I ate six cookies in one day. I am eating for two though so technically I only had three cookies. I shared with the baby:)
I might have to go back to the store to buy more butterscotch chips. I only have five bags left and I want to make Brown Sugar Butterscotch Cookies every day!
Brown Sugar Butterscotch Cookies
Ingredients
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cornstarch
- 1/2 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 3/4 cup unsalted butter, at room temperature
- 1 1/4 cups dark brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup butterscotch chips
- Extra dark brown sugar for rolling cookies (about ½ cup)
Instructions
- Preheat oven to 350 degrees F. Line a large baking sheet with a Silpat baking mat or parchment paper. Set pan aside.
- In a medium bowl, whisk together flour, baking soda, cornstarch, salt, and cinnamon. Set aside.
- Place butter and dark brown sugar in the bowl of an electric stand mixer. Beat on medium speed until light and fluffy, about 3 minutes. Turn off the mixer and scrape down the sides of the bowl with a spatula. Add the egg and vanilla. Beat on medium speed until combined.
- With the mixer on low, slowly add the dry ingredients. Mix until the just combined. Stir in the butterscotch chips.
- Using a spoon or cookie scoop, form tablespoons size balls of cookie dough. Roll balls in brown sugar. Place on balls on prepared baking sheet, about 2 inches apart. Bake cookies for 10 to 12 minutes, or until lightly browned around the edges. Do not over bake. Cool on the pan for 2 minutes. Transfer cookies to a wire cooling rack and cool completely. Store in an air-tight container for up to 4 days.

I have the chocolate chip addition, too. Nestle dark chocolate chips are my favorite — straight out of the bag.
One of my newer finds has been these burgundy semisweet chocolate chunks (http://www.kingarthurflour.com/shop/items/peters-burgundy-semisweet-chocolate-chunks-16-oz). they’re nice and creamy.
I love different variety of chips, however, my Husband only likes semi-sweet. If I mix it up and add different kind of chips, he gets disappointed, so needless to say I have a huge variety of semi-sweet chocolate chips in the house, from every shape and size. Your cookies look out of this world!!

Yes, you can leave the conrnstarch out. It just makes a softer cookie!

These look absolutely scrumptious. I will be trying these next time I make cookies. There are times when I wish my husband loved sweets more than he does. I am working on getting him to experience new things. I have found only one sweet I have made that he ate just about the batch all to himself.

Hi there, I have made many of your recipes and they have turned out well. I gave this one a try a couple days ago and no success ๐
The balls of cookie dough did not flatten and spread. Instead i ended up with rounded raw mounds. I had to double the baking time so that they would bake through. Good flavor but obviously hard as a rock.
Can you kindly tell me what I should do next time to prevent this??

I made a batch of these tonight. Delicious but a tad too sweet for my taste, so I’ll try decreasing the sugar next time. Also, these cookies turned out very puffy, even when I tried flattening them before baking. Would decreasing or eliminating the cornstarch help to make this a flatter cookie? I’m still learning about adjusting recipes, but usually yours turn out perfect for me!
Sorry you had a problem with puffy cookies. You can try reducing the cornstarch or the flour, but I make the recipe as is.

These are delicious! I made them today to bring to our friend’s house for dessert. I literally ate 4 before we went there. I told myself I was not going to eat any tonight- oops, I had 2 more. Darn it!!!! So good!

These turned out fabulous- just as beautiful as in your pictures. Crispy sugar on the outside, chewy on the inside, just the right balance of rich sweet and salty. In fact, three turned up missing as I was rolling up the second batch and the kids are silently enjoying their fresh baked loot!
Oh.My.Goodness. I’ve had a couple bags of butterscotch in my cabinet forever- never used them because I just don’t like butterscotch, but LOVE things with brown sugar. This recipe completely altered my opinion- so easy to make and are super chewy and delicious- perfect to celebrate a cold front in July!

I used to not like butterscotch chips, but this recipe has made me a believer. These are unbelievable – possibly the best cookies ever! dough came out very dry and crumbly for me as well. i added another egg to salvage them. skipped rolling in brown sugar as they were still on the crumbly side. they came out ok, but probably won’t make again.
These cookies are great! Mine turned out a little crunchy though, did I over bake then? They still taste fab!

This recipe was fantastic! Easy, no bizarre ingredients, and a chewy, crispy, wonderful cookie. I used a tablespoon-sized ice cream scoop to portion, and I came out with exactly 34 cookies. They baked for 13 minutes and came out perfectly. The dough looks very thick at the end. I was surprised that there was no liquid added with the flour, like milk. But they scooped out nicely and ended up perfect!

By far the best cookie I have made in a long time. 3 minutes out of the oven and it’s a soft, slightly gooey magical experience in my mouth. Do not, I repeat, do not skip the roll in the brown sugar. Genius.ย
can I use butter flavored shorting insteadof unsalted butter?
These are amazing! I didn’t have butterscotch chips so I just pressed a chocolate chip in the center of each cookie and sprinkled a little bit of salt on top of each cookie and they came out beautifully. Thank you!

These cookies are fantastic!! Super soft and chewy and just incredibly delicious! I used both butterscotch and semi sweet chocolate chips and almost doubled the total amount of chips since I love when cookies are packed full. I will definitely make these again and again!

I picked up some new Hersey’s Sea Salted Caramel Chipits and was looking for maybe a chocolate chip cookie to substitute the Caramel Chips for, and found yours. It came together as expected, no issues. Nothing altered. I did chill the dough before rolling into balls.
Baked perfectly at 10 minutes. Only trouble was waiting for them to cool before consuming.

Having a cookie fresh from the oven right now. I was too lazy to roll them in more sugar so that didn’t happen. But, I did use white chocolate chips, Heath chocolate covered toffee bits and some milk chocolate chips. Such a nice texture and wonderful flavor.

Delicious! Thanks for a great recipe that is butterscotch. mine were perfectly chewy with a crispy edge. I have a theory for those indicating dough too dry-perhaps note to not scoop flour but do the spoon filling technique for flour. I also rolled some in white sugar with a bit of salt; still very much butterscotch but cut some sweetness that others mentioned. Personally, I like your brownsugar roll best!
