BBQ Chicken with Pineapple Bacon Salsa

This recipe has Josh written ALL over it, can you tell? I will give you a hint…BACON! Josh’s favorite pizza is his BBQ Chicken Deluxe Pizza-which has barbecue chicken, bacon, pineapple, jalapeños, and red onion. He recently created a twist on his favorite pizza-BBQ Chicken with Pineapple Bacon Salsa. Yep, he put bacon in salsa. The flavors are vary similar to his favorite pizza, but in summer form. This recipe is perfect for grilling season!
This recipe is super easy. Use your favorite barbecue sauce to coat the chicken, grill to perfection, and serve with fresh pineapple bacon salsa. The salsa is refreshing with a hint of smokiness from the bacon. It goes perfectly with the BBQ chicken. Josh also likes to serve Bush’s Smokehouse Tradition Grillin’ Beans on the side. The beans bring out the smoky flavor of the bacon even more. They are a great side dish to this summer meal.
Sunday is Father’s Day and this BBQ Chicken with Pineapple Bacon Salsa would be a great way to celebrate Dad. Get out the grill and get cooking!
BBQ Chicken with Pineapple Bacon Salsa
Ingredients
- 4 boneless skinless chicken breasts
- Salt and pepper to taste
- 2 cups of your favorite barbecue sauce
- Olive oil for brushing the grill
For the Pineapple Bacon Salsa:
- 2 cups diced fresh pineapple
- 4 strips cooked bacon diced
- 1/2 cup chopped cilantro
- 1/4 cup finely chopped red onion
- 3 tablespoons finely chopped jalapeno pepper stemmed and seeded
- 1 clove garlic minced
- Juice of 1 large lime
- Salt and pepper to taste
Instructions
- 1. Season the chicken breasts with salt and pepper. Place the chicken breasts in a large Ziploc bag. Add the barbecue sauce and mix until breasts are covered. Let the chicken marinate in the refrigerator for 30 minutes.
- 2. To make the Pineapple Bacon Salsa: in a medium bowl, combine pineapple, bacon, cilantro, red onion, jalapeno, garlic, and lime juice. Stir until well combined. Season with salt and pepper, to taste.
- 3. Preheat a grill to medium-high heat and brush the grill with olive oil. Remove the chicken breasts from the bag and place on the grill. Discard the barbecue sauce and the bag.
- 4. Grill chicken until cooked through, about 5 minutes per side. Remove from grill and serve warm with the Pineapple Bacon Salsa.

This looks pretty good even though I hate onions. I would add come coriander and cumin to the salt and pepper to make the flavor kick a little.
