Who needs a 20-minute meal that you can whip out when life is busy? We all do, right?

These BBQ Chicken Pita Pizzas are a dinner lifesaver. They are perfect for busy weeknights. They only take 20 minutes tops to make and kids and adults LOVE them. My boys request these fun pizzas for dinner all of the time.

To keep the pizza EASY, we use pita bread for the crust. Top the pita bread with barbecue sauce, shredded rotisserie chicken (another time saver), mozzarella cheese, and red onion slices. Bake until the cheese is melted and garnish with a little cilantro.

Cut into slices and serve! It really is that easy. We love making these little pizzas for dinner, a quick lunch, or even a snack.

Simple Ingredients

You only need a few ingredients!

  • Pita bread– make sure you use pita bread that lays flat so you can make a pizza. You can use regular or whole wheat. You can also use a gluten-free flatbread if you need the recipe to be gluten-free.
  • Chicken– we use shredded rotisserie chicken to keep the recipe super easy. You can use leftover cooked chicken if you have it. Just chop or shred it. You can also use our slow cooker bbq chicken.
  • Barbecue sauce– you can make homemade BBQ sauce or use your favorite store bought brand.
  • Cheese– we use shredded mozzarella cheese, but smoked mozzarella or even cheddar cheese would be tasty.
  • Red onion– thinly sliced!
  • Cilantro– for garnish!

How to Make Pita Pizzas

  • Preheat oven to 400 degrees F.
  • In a small bowl, mix chicken with 2 tablespoons of the barbecue sauce.
  • Spread 2 tablespoons of barbecue sauce evenly onto each pita. Top the pitas evenly with mozzarella cheese, barbecue chicken, and red onion slices.
  • Place each pita on a large baking sheet. Bake for 10 to 12 minutes, or until cheese is melted.
  • Remove from oven and garnish with fresh cilantro. Cut into slices and serve immediately.

Additional Topping Ideas

If you want to add additional toppings to your pita pizzas, you certainly can. Here are some ideas.

  • Jalapeño slices or candied jalapeños
  • Corn or corn salsa
  • Pineapple or pineapple salsa
  • Fresh peach slices
  • Veggies- mushrooms, bell peppers, and spinach are great options!
  • Sliced olives

Serving Suggestions

You can serve ranch dressing or guacamole on the side. My boys love dipping their pizza.

If you want to serve a few side dishes to bulk up the meal, here are a few of our favorites.

How to Store & Reheat

The pita pizzas are best hot, right out of the oven, but if you have leftovers, you can store the pizza in the fridge for up to 2 days. Let the pizzas cool completely and store in an airtight container.

To reheat:

  • You can reheat the pizzas in the oven at 350 degrees F, just until heated through.
  • You can also reheat in a skillet on the stovetop. Place a slice in a non-stick skillet on medium-low for a couple minutes. Once the bottom is crisp, add a couple drops of water to the pan, turn the heat down to low, and cover with a lid. Cook for 1 more minute or until the cheese is nice and melty.
  • If you have an air fryer, pop a few slices in the basket and cook at 360 degrees F until cheese is melted. It will only take a couple of minutes.

  • 1 cup shredded chicken, we use rotisserie chicken

    Very tasty and a hit with my guy. Not sure if it was the brand of pitas I got or not, but will probably try these on Naan the next time as I just thought the pita itself was a little bit cardboard like. But what was on top of the pita? Delicious!
