We make Chicken Taquitos ALL of the time. They are great for an easy weeknight meal, game day, or entertaining. Everyone loves them!

Taquitos are basically rolled up tacos, stuffed with your choice of meat and cheese, and then traditionally fried until crispy.

To keep these taquitos on the healthier side, we bake them in the oven. Don’t worry, you won’t miss the frying, they still get nice and crispy in the oven.

Taquitos are usually made with corn tortillas and flautas are usually made with flour tortillas. We love using corn tortillas for these taquitos. They are gluten-free and so delicious!

You can serve taquitos as an appetizer or as a meal, it just depends on how many you eat.:) They are perfect for parties because you can make them in advance and put out all of the toppings for your guest to enjoy.

Ingredients

The ingredient list is simple!

  • Shredded chicken– we use rotisserie chicken to keep things super easy, but you can use leftover shredded chicken.
  • Spices: cumin, chili powder, garlic powder, and paprika
  • Fresh lime juice– just a little to brighten things up!
  • Shredded cheese– you can use cheddar, Mexican blend cheese, Monterey jack, or even pepper jack if you want a little kick.
  • Corn tortillas– look for the freshest tortillas you can find.

How to Make Taquitos

  • Preheat the oven to 425 degrees F. You want the oven nice and HOT so the taquitos will crispy up. Spray a large baking sheet with nonstick cooking spray and set aside.
  • In a medium bowl, combine the shredded chicken with the spices and fresh lime juice. Stir until chicken is well coated with the seasonings. Stir in the shredded cheese.
  • Pro tip, to prevent the tortillas from tearing, heat them up in the microwave. Get two paper towels damp and place two tortillas at a time in between the paper towels. Place in the microwave for 20-30 seconds. Remove from the microwave and roll up the taquitos.
  • Place a heaping tablespoon of the chicken and cheese mixture in the center of the tortilla and roll it up tightly. Place the taquito, seam side down on the prepared baking sheet. Continue rolling taquitos until the tortillas and filling are gone. You should have about 20 taquitos. If the tortillas tear a little, it is ok.
  • Spray the taquitos generously with oil. Bake until taquitos are golden brown and crispy.

How to Store

  • Leftovers will keep in an airtight container in the refrigerator for up to 4 days. To reheat, place them on a baking sheet and spray with cooking oil. Bake in a 350 degree F oven for about 15 minutes or until they are warm and crispy. You can also reheat in an air fryer for a couple of minutes until heated through.
  • You can freeze the taquitos before you bake them. Place the taquitos on a baking sheet and freeze. When frozen, place taquitos in a freezer bag and freeze for up to one month. When ready to bake, preheat the oven to 425 degrees F and place frozen taquitos on a large baking sheet. Spray with nonstick cooking spray. Bake for 15-20 minutes.

Ingredients
  

For the Taquitos:

  • 2 cups shredded chicken, we use rotisserie chicken
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground chili powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 2 teaspoons fresh lime juice
  • 1 cup shredded cheddar or Mexican blend cheese
  • 20 corn tortillas

For the Toppings:

    These we delicious! I used flour tortillas because my family prefers them to corn tortillas. They got so nice and crispy in the oven. The recipe is very fast once the chicken is ready.     1. We don’t use that cheese and we don’t use cumin, paprika, garlic, and we fry the flauta (taco)

      We can use all that things but not for flautas or tacos.ย

      My Family absolutely loved these the last time I made them and am making them again this evening! I cook the boneless chicken in the crockpot with chicken taco seasoning, chicken broth and cilantro. Then use 1/2 flour and 1/2 corn tortillas for a variety.     A friend on Facebook posted this recipe and I had to try it. So tonight for dinner I made them, and OMG they are so good. I ate 5 of them. I love taquitos but they are so unhealthy because of them being fried but these are perfect for those, like me who are trying to eat healthy but still love Mexican. Will keep this recipe in the dinner line up forever.ย 

    1. We have had veggie tacos before w/ diced sweet potatoes, corn and black beans. Add all the spice her recipe calls for. It is delicious.

    We made these tonight for Cinco de Mayo! They are SO easy and delicious! We did have some trouble with the corn tortillas staying rolled up. I would like to try these with flour tortillas.

    1. An easy thing to do is put chicken breasts in the slow cooker and shred them.

  12. Going to try these soon. Queso Fresco sounds like it’s much the same as kefir. I make kefir, and mine is usually like a fresh cheese. Think I could substitute kefir for Queso Fresco?

    1. Queso fresco is more like feta cheese, it has that texture/consistency.

    I made these vegetarian. Yum! One batch with cumin and garlic spiced refried beans, chedder and onion…one batch with cumin black beans, rice, tomatoes, peppers, onions and garlic. Both great!

  18. “Spray the taquitos with cooking spray”? No way. That’s criminal. The recipe isn’t bad, though it doesn’t really suit my taste (needs more spice). Good baseline though.

    1. Um, have you actually sprayed food with cooking spray and cooked it? Because I do it ALL THE TIME and it works out extremely well. When you’re seeking a healthier alternative to frying, spraying with vegetable oil cooking spray and popping it in the oven is the way to go. Don’t knock it until you try it!

      The very reason I sought out a recipe like this is I automatically figured if I sprayed the tortillas with cooking spray and baked them at a high enough temperature I could get them crispy to get a similar taste to fried taquitos. And yes, it looks like it can be done so I’ll definitely be trying this tonight! Thanks so much for the recipe!

    2. I used a handheld sprayer that I had filled with avocado oil. But, when in a pinch, I’ve used commercial avocado or coconut oil cooking spray on roasted veggies. Works fine, but is a bit expensive if you make them a lot. (We do.) Better to buy a good food grade oil/ salad dressing sprayer. Easily the best purchase I’ve made in the last year! I use it multiple times a week and have been able to cut way down on our oil usage.

    This is a great weeknight recipe! Quick and easy, and Yummy! The only alteration I made to the recipe, was to use canned turkey instead of the rotisserie stuff. I always have canned turkey in the house. I never follow a recipe the way it’s written, so for me to stick to the original this closely means it’s a dang good recipe. I will be making this again!

    Thank you so much for sharing your recipe! I watched a friend make homemade taquitos and she made it look so easy (she used rotisserie chicken as well) but I wanted more of a kick when it came to the filling and came across this recipe while searching how to season chicken for taquitos. Anyway, I really loved the flavors you put together. I ended up frying them instead of baking though, and I was wondering if you have any tips on preventing the corn tortillas from falling apart? I heated them in-between moist paper towels as I found the tip online, but they still fell apart. What am I doing wrong? Any advice? Thank you.

    1. My husband and I really enjoyed this recipe! I did add extra chili powder and garlic powder as well as a few tablespoons of salsa to the mix as we enjoy stronger flavours. I also used vegan daiya Mexican cheese due to milk allergy. I tried heating 4 corn tortillas in a moist paper towel for 20 seconds and they fell apart. I then got a clean cotton tea towel and got it good and wet, rang it out and heated 4 tortillas at a time in the wet towel for 30 seconds and it did the trick! They were moist, warm and easy to roll. I used olive oil instead of the spray and they turned out lovely! Thank you for posting!

      Yes, try some cream cheese. I made these as written but used 1/2 of the shredded cheese and 4 oz softened cream cheese. I sprayed them with olive oil and convection baked them. These were absolutely delicious. Thank you for a great recipe!

    These are wonderful! I made these a couple of weeks ago and am making them again tonight! Growing up, taquitos were one of my favorite foods. Now, ย all grown up, they’re still one of my favs. These turned out crunchy, delicious and with less guilt. I used Trader Joe’s Just Chicken ( all breast meat and roasted) instead of a rotisserie chicken. Less work and less waste. Thanks for a great recipe!

    This time I made it with the corn tortillas. Last time we made it with flour tortillas because that’s my preference. However I think I’m going to convert to corn for this recipe. I did get 22 out of it. We love love love this recipe!

    These are super easy, fast, tasty and not greasy because they are baked.You easily adjust the seasoning to your style. Love the process in the mico-wave to soften the tortillas. As anyone who has tried in the past to roll these up out of the frig, you end up with broken, messy tortilla pieces everywhere. Hope to try them with left over steak or pork.     My taquitos were really dry, so we loaded them up with all the trimmings–which made them messy to eat. Solved the problem by making them into enchiladas (pouring enchilada sauce over them in a casserole dish.) Don’t think I’ll make them again. BUT I learned about Queso Fresco from this recipe. Good stuff!

I make a lot of things from your website but I don’t usually come back to comment (the enchilada bakes are my favorite) but this time I really wanted to thank you. ย I have always wanted to make taquitos but never knew how to get the corn tortillas to roll up. ย While I altered the recipe to make black bean and cheese since my husband and I are vegetarians, the basic process was the same and WOW they were amazing and so easy. ย I used canned black beans, 2 heaping tablespoons of fresh salsa, mexican blend cheese and adobo spice, salt and pepper.

    Not bad. The chicken filling turned out very dry. Flavor was just okay. I used my air fryer and sprayed the Taquitos with some olive oil, air fried them for about 6-7 minutes at 380 degrees then turned them and sprayed them with some olive oil and baked them another 5 minutes. A quick meal for the two of us. I used the large tortilla shells and cute them in halve and filled each with the chicken mixture. This made it easier to fit into my air fryer.

    I made these last night for dinner . They were fast and easy . Very delicious. ย Since we were eating them as our meal I used medium tortillas and filled them fuller, so I only got 8. I will definitely make these again.

    1. I season a couple of boneless, skinless chicken breasts with the seasonings mentioned above the grill them on the bbq. I let them cool a little the shred the meat and season the again with ingredients in the recipe. They turn out really good!

    1. If you put them in the microwave between 2 pieces of wet paper towel they will roll well. If you use flour, no need to put in microwave.

    We always add a can of green chiles, some diced onion, and diced garlic to the meat. My kids just love this dish! My son actually complained because I said I was going to make it all week and flakes out. So I had to make them for breakfast – I know! – and be ate 3 of them! They were flour tortilla, so they were pretty big, and heโ€™s a very small 10 year old! Lol! I made some with whole wheat tortillas and those actually came out more crispy. Yum! We donโ€™t usually have nonstick spray so we just brush ours with a little olive oil. They donโ€™t last long in the frig! Thanks for sharing!ย

  45. I bought 2 chickens and made a triple batch. Froze them all on a large cookie sheet and then broke them apart and placed in freezer bags. Perfect for kids to make as a quick snack after school! My family loves them!

  46. This was wonderful! My husband and I are empty nesters, so I’m always trying to find new tasty recipes for just the two of us. I baked one boneless chicken breast seasoned with the cumin, garlic salt, chili powder, paprika last night and shredded in a bowl. Kept in the fridge overnight to make tonight after work. I’ve never really been a fan of corn tortillas, but I love these! Baking makes all the difference. Mixed the cheese into the chicken, assembled and had dinner on the table in no time. Yum-Oh!

    1. I use regular size corn tortillas. But I make sure the paper towels that I put in the micro wave are pretty wet. I had this same problem the first time I made them.

    This recipe is absolutely amazing and easy!! I will definitely be making these again. The filling ideas are endless just like the topping ideas!
    I used “Art” brand corn tortillas and didnt have to warm mine with a damp cloth. I used them straight out of the fridge. This was a first for me because all other corn tortillas break and tear.

  59. Great idea for a dinner. I love tacos, even if they are small taquitos or big tacotes. (Taquitos is just the diminutive for tacos) By the way, tacos are also usually rolled tortillas, not the funny toast thing. Tacos are rolled, that is jut what a taco is, a rolled tortilla. and flautas can also be corn tortillas, usually longer than a regular corn tortilla and fried. Tacos are not fried nor baked, but can be and then they are called tacos dorados (fried tacos). Burritos are with flour tortillas. And all that has variations from where in Mexico you are.     I made these for an appetizer – filled corn tortillas with rice that I mixed with quesadilla cheese, homemade taco seasonings & a few tablespoons of chunky non watery salsa.   63. Iโ€™m making this today but I have trouble rolling the tortillas. Iโ€™m following directions but not sure why the tortillas are breaking. The only thing Iโ€™m doing different is Iโ€™m using gluten free tortillas. Any thoughts why my tortillas are breaking. Thanks

    1. It is probably the tortillas you are using. Did you try microwaving them a little so they are slightly warm? That helps. Also, the fresher the tortillas, the better. If they are dry, they are more likely to crack.

    These were absolutely delicious. I used flour tortillas instead of corn. I only got a dozen from the recipe. Maybe filled too much, but was worth it!

    I made these for my husband and me for lunch to use up some leftover chicken. 2 out of 3 of my (fairly picky!) kids ate them and loved them, too! Huge win. The adults enjoyed them, too, and we will definitely be having these for an easy dinner or lunch again. Thanks!

    1. You can make them in the air fryer. They won’t all fit, so do them in batches.

    I made these today. I did half the recipe and used street sized corn tortillas. Unfortunately, we thought they were very bland so although I like the recipe overall, next time Iโ€™ll add more seasoning.

    I think the recipe itself is very good and I thank you for it. This was my umpteenth attempt to make taquitos and your recipe turned out closer than any other to the taste Iโ€™m trying to get. A couple of the tortillas split but thatโ€™s not a big deal.

    The recipe is definitely a keeper!

  76. We’ve made these taquitos countless times and everyone loves them! I keep them in the freezer for my teenagers, have sent them in their lunches, and now my college-aged daughter requests them to be stocked at her apartment freezer. Ha! ๐Ÿ™‚ Thanks for such a great recipe!
