Christmas morning isn’t Christmas morning unless I am eating one of my dad’s famous homemade cinnamon rolls. They are a family tradition. Josh loves my dad’s cinnamon rolls, everyone does, but Christmas morning for Josh means BACON! Josh loves bacon and insists on making his favorite breakfast casserole: my Bacon, Potato, and Egg Casserole every Christmas. I don’t mind because he does all of the work and there is always room for another tradition, especially a food tradition. The more the merrier on Christmas!

The “B” in Breakfast Casserole is for…Bacon!

This is the perfect egg casserole for Christmas morning because it is easy to make, feeds a crowd, and everyone loves it! And, it has bacon. Loads of it. Our boys’ eyes light up like the lights on our Christmas tree when they hear the word bacon:)

This easy breakfast casserole is filled with Wright Brand Naturally Smoked Applewood Bacon, cheddar cheese, and potatoes. Josh also adds onion, red pepper, and garlic for flavor.

An Easy Make-ahead Breakfast Casserole

This egg casserole can be prepared in advance, which makes it perfect for Christmas morning. You can prepare the night before and bake in the morning or you can bake and reheat in the morning. And just an FYI, this Bacon, Potato, and Egg Casserole also makes a great dinner, especially on busy weeknights. My boys love this breakfast casserole ANY time of the day!

Bacon, Potato, and Egg Casserole

This easy breakfast casserole is packed with bacon, potatoes, and cheese! It can be prepared ahead of time and is a real crowd pleaser!

  • Heat the oven to 350°F. Grease a 9×13 baking dish with nonstick cooking spray and set aside.
  • In a large skillet, cook bacon over medium heat, stirring occasionally. Cook until it is a nice crispy brown. Remove bacon with a slotted spoon and place on a paper towel lined plate. Roughly chop the bacon and set aside.
  • Add the onion and red pepper to the skillet and cook over medium heat until tender. Add the garlic and cook for 2 minutes. Set aside.
  • In a large bowl, beat the eggs and whisk in the milk. Stir in the cooked vegetables, potatoes, and 1 cup of the shredded cheese. Set ¾ cup of bacon aside and stir in the rest. Season with salt and pepper.
  • Pour the mixture into the prepared baking dish and top remaining cheese and green onions. Bake for 20 minutes so the eggs start to set up. Carefully add the remaining bacon to the top of the casserole. Bake for an additional 20 tot 30 minutes or until the eggs are firm and the top is slightly golden brown. Let stand for 10 minutes. Cut into squares and serve warm.
  • Note: This casserole can be made in advance. Pour the mixture in the pan and refrigerate for up to 24 hours. Bake when ready to eat. You can also reheat the casserole.

  2. This looks like the perfect thing to make for our family’s Christmas morning breakfast! Have you tried baking this in a muffin tin to make “make-ahead” breakfasts? Could be a yummy idea!

    1. Yes, I actually pour them into cupcake papers then put them in freezer bags and the kids just pop them in the microwave.ย

    1. Sorry I didn’t make sense. I updated the recipe to be more clear. Yes, just use frozen potatoes. No need to thaw or cook them! Easy peasy!

    2. Another potato question–If using fresh diced potatoes, do they go in raw or do they need to be cooked first before adding?

    1. No need to thaw or cook the potatoes, just add them in frozen. I clarified in the recipe. Sorry if it was confusing!

    1. You can use fresh potatoes, but cook them a little with the veggies to make sure they get done.

  11. Hi. ย If I put this together the night before, don’t the potatoes thaw and get mushy? ย Or do you just throw the potatoes in with the rest of the mixture right before you bake it in the morning?

    1. I haven’t tried it without cheese. It might be dry without the cheese, but let me know if you try it! Maybe add more eggs?

    1. I was confused about that as well. I ended up awkwardly spooning the cooked onion and red pepper out onto a paper towel just I did with the bacon. Worried a bit about losing some caramelized onion flavor, but the thought of keeping in all that bacon fat – was not going to happen. The casserole turned out great – was a big hit for our brunch. Next time maybe I’ll saute onions/pepper in 1 part bacon fat 3 parts olive oil – because as we know, there’s nothing more yummy than anything bacon! Well, maybe except bacon ice cream.   15. This looks delicious! I made it for a work function for my husband, unfortunately, I won’t get to taste it. I did have a question, though. After cooking and removing the bacon from the pan, in instruction 3 you said add the onion and peppers to the pan and cook till tender. Did you mean cook the onion, pepper, and garlic in the bacon grease left from the bacon? If so, I assume I drain the veggies afterwards. Or did you mean to dump out all the bacon grease and THEN cook the veggies in a clean skillet? Asking because there was about a cup of bacon grease after the bacon was done cooking. Thank you!

    1. I didn’t have that much bacon grease. You can dump some of it out and use a little to cook the onion and peppers.

    2. We had more bacon grease than we cared to consume, and I wanted all the nutrients of the veggies, so we cooked those in a separate non-stick with only 2-3 spoonfuls of the bacon grease (which included that salty foam that sometimes forms on the top of the grease). Thatโ€™s all the oil you need to cook the veggies! We also *added* 1/4 cream (that we use with our coffee) because our milk is 1% and we wanted to keep the richness of the recipe without so much grease. All else the same! Poured into casserole next a.m. It set up and cooked beautifully with the expected texture as seen in the pics. Used cilantro instead of parsley! Yum!

  16. If I wanted to bake this in a muffin tin should I adjust the bake time at all?? I’m making this for my mom for Mother’s Day!! Can’t wait for her to try it!! Thanks in advance!!

  17. Any recommendations for how to adjust this to be muffins? Would we need to defrost or cook the potatoes first since the cooking time would be shorter? And how long would you recommend baking them for?

    1. Did you try making these in muffin tins? How did they turn out? ย How long did you cook them for?

    2. I haven’t, but I am sure it would work just fine. Reduce the time, I would check them at 12-15 minutes to be safe. They might take a little longer.

  18. I cut this in half because it was only my husband and I. Didn’t have that much bacon, but even so it was amazing. We ate about 2/3 of it and put the rest in the frig for later. My picky husband rated it a 5 (highly unusual for him). Will definitely add more bacon next time.

  19. I think the oven temp may be a little low. I’ve had mine in for over an hour now and the middle still isn’t quite set, finally bumped the temp up to 400 degrees.

    1. I had to do the same, cooked it until the center was firm, an extra twenty minutes or so. ย Excellent recipe though and the leftovers are great too! ย Perfect make ahead casserole!ย

    Served with fresh local strawberries ,raspberries and cherries!

    1. Yes. It freezes great. We cut ours (what was left) into portion sizes & froze them individually. They can take a while to thaw, in the winter at least, as I don’t use the microwave (although my husband does & said it worked fine). If I remember correctly, I re-heated my 3″x3″ piece & a bigger piece for my husband at 350ยฐ for about 20 min as they were still partially frozen. His was a bit too heated & mine was WAY TOO heated – neither was any worse for the wear! Still great taste & texture.

      Hubby wanted to try cooking the hashbrowns before using on our second batch, so I pre-cooked them until crispy. Although the cassarole is great following the above directions, this batch was even better. And then we added ham….. over the top.

    2. Can I not cook the casserole the potato bacon egg casserole and just put it in the freezer and then bake it a week

  21. Couldn’t not get this to cook in the center, should definitely use thawed potatoes even though the recipe said frozen was okay. Baked twice as long, cheese started to burn, pulled out of oven, scooped out uncooked center and cooked in frying pan – ughh!!

      When I have egg type casseroles that seem to take too long to get center set I find pulling n g it out about halfway thru and give it a stir, then back in oven to bake, if it starts to get too dry around edges I also will cover edges with foil (kind of like how you protect a pie crust edge)

  25. I made this Christmas morning with regular and turkey bacon. It was a huge hit on both ends. I was wondering for everyday breakfast could this be made with half whole eggs/half egg whites? If so, should I increase the egg whites?

    1. Glad you liked it! If you are taking the egg yolks away, you will need to add more egg whites.

  29. I made this for a brunch and it turned out awesome. We had some non-pork eaters, so I used turkey bacon, and I used the Simply Potato brand packaged hash browns. Everyone loved it, and I love that it’s a simple recipe that you can tinker around with.ย 

  30. I’m wondering if anyone’s tried to double this? I need to make breakfast for 75 to 80 people for a homeless outreach for our church. I was thinking if I doubled it 4 times (4 LG tin casseroles) that it might work. Any suggestions?

    1. I just made this for 26 women at a church retreat and tripled the recipe (for 30). ย It all went into one large aluminum casserole pan (from Sam’s Club) ย We had very little left over. ย Doubling it 4 times sounds like it would feed the number of people you are talking about. ย

    This is a go to for Christmas or to freeze for weekday breakfasts! I do think there is a bit too much cheese. I use 1 1/2 cup cheddar divided. Removed all but 3 tablespoons bacon grease to saute vegetables. I keep the bacon grease on the side in case I need more. Also, It doesn’t set up in the time alotted so I put under the broiler for 3-5 minutes to brown on top! The more cheese the more wet it stays!

I made this wonderful casserole for 26 women at our church Retreat and tripled the recipe. ย It was an instant hit with any asking for the recipe. ย I made it the night before and added an additional 40 minutes to the baking time as we live in the mountains and needed the additional time. ย I used one of the very large aluminum baking pans from Sam’s Club and it held it all perfectly. ย It rose as it baked and was like a souffle, ย I plan on using this recipe again during the holidays. ย It was great!!

  40. I made this to take to a tailgate. It was a great recipe but WAY too salty. The bacon adds a lot of salt so back off on the salt. I also took a shortcut of using frozen potatoes with onions and peppers mixed in. I will make again. Perfect for breakfast or brunch.

    I made this for Christmas Eve brunch. It was sooo good! As any one cooking does, I had my own little variations. I added mushrooms, and seasoned the egg mix with pepper, a little salt, paprika, garlic powered, parsley, and oregano. I also did a mix of heavy cream and milk instead of straigh milk. I also used a different kind of bacon than what was listed. I ended up needing to cook the eggs longer than what is listed here, probably closer to an hour and a half.

    I have a gluten-free brother-in-law so this is a great alternative to a strata. This recipe is bookmarked and will definitely be making it again!ย

    Just to let you know that I made this recipe for my family. ย I have a sister that does not like bread in these type of breakfast casseroles so this was the one for me to try. ย I used fresh diced potatoes that I steamed in the microwave only because I didnโ€™t have any frozen potatoes in the freezer. ย I also omitted the onions because my eldest daughter does not like onions. ย I used onion powder instead. ย  And there was one more substitution of garlic powder instead of fresh garlic-for the life of me I could not find the garlic cloves I just bought. ย My family enjoyed it very much. ย Even with multiple substitutions this was a yummy dish for breakfast. ย Thank you. ย

    Prepped this the night before and placed it in the fridge. Took it out of the fridge the next morning and baked it for 50 minutes in a Pampered Chef stoneware pan. It tasted excellent!

    1. I have pampered chef stoneware also. What did you think of cooking with them compared to regular glass, etc. casserole dishes. I have used my pizza stone and love it. However, I haven’t used my bread or other stone pieces. Would love some input. Thank you.

    1. It makes a 9×13 pan. You can maybe get 17 servings out of one pan, but they will be smaller. If it is the main dish, you might want to do 2 pans.

    Love this recipe, made it for three different occasions in the last three weeks! Eggs are wonderfully moist, not dried out like some egg casseroles. The only thing I changed is 1 clove of garlic, three is too much garlic.

    Thank you so much for this recipe. I had never done a breakfast casserole before so I decided ย to give it a try and take it for ย workโ€™s potluck….and it was a total hit!!! However I will say that I did have to raise the temperature up to $450 for about 5-7 minutes after the total 40 minutes because it just wasnโ€™t cooked all the way at 350. Other than that i will continue to make for my family.ย 

    1. You can use them, you don’t need to thaw them. It might take a few more minutes, but not much.

  58. I make this recipe, but I take frozen hash browns, thaw them then line the bottom and sides of the 9 ร— 13 pan with them, pour in eggs mixture and bake!!

    Thank you for this fabulous recipe! ย We had a house full of relatives staying over the Christmas holidays this year. ย I prepared this Christmas Eve night, parboiling fresh potoatoes and using cooked sausage meat instead of bacon. ย Christmas morning, early, I took it out of the fridge and let it sit on the counter for 45 mins, while the troops assembled by the tree. ย 
    During the presentsโ€™ mayhem, and when a few of the kids started saying they were getting hungry…I sneaked into the kitchen, popped it into a preheated 400 degree oven (my oven is old so I need to bake everything at 400), and within a short-time, it was done and the aroma was heavenly. ย I did add more grated cheese (a mixture of havarti and cheddar) on top, halfway through baking. ย 
    Everyone loved it and the kids abandoned their presents like they were under a spell, as the smell brought them all to the table. ย Not a morsel was left and I ended up making it again, the day they all left, for their long drive home. ย Everyone thanked me over and over for making it. ย 
    So, in turn, I, thank you, for this fabulous recipe. ย I now call it, โ€œMomโ€™s Morning Life-Saver!โ€ย 
    My husband says I should call it simply, โ€œHappy Family!โ€

    My family loves this breakfast casserole. ย Sometimes we change out the cheddar for Monterey Jack and the red peppers for green chilies. ย Either way we make is great. ย The best part is the leftovers make a fantastic filling for breakfast burritos.ย

    I made this for brunch this morning along with my old standby sausage, egg and cheese casserole. ย Let me start out saying ย I never follow a recipe to exactly. ย The only changes I made were a little more milk ( 1/2 cup of so) and I cut up potatoes and parboiled them. ย I added a little more salt too. ย It cut and served well. ย My sausage, egg, and cheese was still the kids pick – they love that casserole.

    1. Used frozen hasbrowns frozen, threw them in to the dish and then covered with egg mixture. Cooked for 40, and worked great. Potatoes were perfect.

    Cook an extra 20 minutes — middle was still runny after only 40 minutes. Substituted 1/2 jalapeno pepper for red pepper (next time will use the whole jalapeno) and added some garlic powder as well as fresh garlic. I just threw all the bacon into the egg mixturw but did put half of the cheddar on top with the scallions. Delicious and super simple!! Will make again.

  68. If using bacon, do you fry it first? Also, do you use a round 8 qt. casserole dish or a 9 x 13 baking dish?

    1. See the recipe, yes you cook the bacon first and you need a 9×13-inch pan.

    This was very good, quick, and easy. I made a 1/2 recipe for my book club. I used diced ham (about a cup or so), Monterey Jack, O’Brien-style frozen potatoes. I added a little onion powder, garlic powder, and cayenne to the egg mixture. It literally took less than 5 minutes to put the casserole together. I baked it at 350 for 20 minutes, top with the rest of the cheese, a little green onion, a sprinkle of paprika, rotated the pan, and baked for another 20 minutes. Still wasn’t set in the middle, so baked for an additional 10 minutes. It turned out perfectly. I will make this again. Thank you!

    I used this recipe as a guide for breakfast at church-used prepped homemade diced, oven-roasted potatoes and prepped bacon (from the night before) and omitted the veggies, onions and garlic for a very simple version. It was delicious and a hit!

I substitute REAL Bacon bits to simplify (1 1/4 c per recipe) and have flexed with the potatoes–frozen southern hash browns or diced baked potato or tater tots. As others have noted, I like a little more spice so add some cayenne pepper. Great recipe that is gluten free ๐Ÿ™‚ (I usually make one recipe without bacon and with more veggies by sauteing some mushrooms and extra veggies with onion in olive oil).

    This is good. I made the night before. I added extra cheese and some extra potatoes. It also took longer to cook than the recipe says.
    Also, itโ€™s important to note the prep time is much longer than 15 minutes. It takes 15 minutes just to cook the bacon. I would say the prep time is 40 minutes.

    This was so fantastic it surprised me. My boyfriend gave it an 11/10 and said he would eat it anyday, and suggested I cook it at my work for Sunday brunch because anyone who doesn’t like this would be a fool. I work in an addiction treatment centre, and comfort food is what is appreciated by the residents there, and that is exactly what this is – comfort food at its finest.   92. Just made a vegetarian version of this and it was fantastic!!! We swapped the bacon for 3 hot Italian bayond sausage and I think this substitute would fool even the biggest meat eater.

    I cooked the sausage till it was lightly brown and crisp prior to putting the bake. And did not too the bake with any, but just mixed it in.

    We did cook the bake 30 minutes more than suggested.

    This was delicious! I made it for Mother’s Day brunch today (since pandemic lockdown didn’t allow us to go out for brunch this year) and everyone loved it. It’s a bit like a quiche without the crust!

    Slight tweaks I made:

    Used frozen hash browns, and ended up combining them in the skillet with the onion and bell pepper for a few minutes (mostly because some were frozen in larger chunks and I didn’t want them to go into the casserole that way).

    Ended up just dividing the bacon in half, pouring half into the first mixture and half on top after setting the eggs.

    As other reviewers have noted, it took longer to bake for me (and I have a very new oven). I cooked it for 25 minutes, then checked and it still wasn’t really “set” but was very liquidy in the center, so I cooked it for another 5 — then topped it with the second half of the bacon. Cooked for another 25 minutes (I think? Maybe 30 — I was checking at 10-min intervals to make sure I didn’t overcook) and it came out AMAZING. Light and fluffy but with plenty of substance.

    A definite do-again recipe! I can see this becoming a yearly Christmas/Easter tradition, as easy as it was to make and as delicious as it turned out. Thanks!!

    1. Of course fresh is best, but you can reheat it. Cover with foil and reheat at 350 degrees F for 20 to 25 minutes or until heated through.

  105. Very very flexible recipe.. If you chop things adjust the prep time. You can put all kinds of veggies in her and use things from the garden. You can chop tomatoes, zucchini, chili’s, onions, leeks… This is a real opportunity to empty your veggie drawer.. You can also use all kinds of frozen pre-chopped veggies if you are in a rush. Bacon chopped, sausage chopped, veggie sausage.. even the garden burger cooked and chopped will work here. I also used a variety of cheeses to vary the flavor. Guyere, swiss, jack, cheddar.. whatever you have… grate it or dump it out of a bag.. Think of this as a kind of quiche without the crust.. ๐Ÿ˜‰ To put in veggies without your kids knowing… grate zucchini .. it will blend right in.. I do that with sloppy joes too. Rice it or grate it. I baked mine at 375 for 50 min. It was golden brown and perfectly cooked. I think the cook time on the recipe might be off, but you know your own oven. Great recipe and great website!

    I love this recipe! Itโ€™s a favorite in our household. Itโ€™s often our Brinner – Breakfast for dinner meal. I prep it at lunch. I have made it with extra frozen potatoes, required longer cook time. Iโ€™ve swapped peppers, Iโ€™m allergic, to broccoli with great success. This is such a versatile dish. I makes a great meal prep too as I have left overs and eat it for breakfast the next day.

    I made it up the night before.
    For the bacon, I cooked all of the bacon in the oven to save me a hassle. If you have never done it, I do 400 degrees for 15+ minutes.
    I used fresh shredded potatoes. I did not cook them prior.
    I put green onions in the eggs and left some for the top. I love green onions in eggs.
    For the cheese/onions on top, I just put it on before I was ready to bake it.

    This came out perfect. Will definitely make again.

    I made this today and it was amazing! I cooked veggies in the bacon grease & I had a pillsbury pre-made pie crust left over from the holidays. I buttered a cast iron skillet and lined it with the pie crust. I treated the cheese like I do my Mac-cheese, which means I used sharp cheddar, Gouda, a lot of Swiss Gruyere, Muenster and a bit of Brie. It was off the hook! This is a keeper. Thank you!

    Very tasty. I added mushrooms and orange bell peppersl. Halved bacon and added breakfast sausage. Halved whole milk with sour cream. I might do breakfast hashbrowns next time. I like to bake them ahead to create a crusty layer on the bottom with everything piled on top.

    I will make this again. That said, definitely not a 15 minute prep for me and I know my way around a kitchen. It seems most recipes nowadays are way off on prep time, so I’ll always expect more time.

I took the directions to mean that you include all the pan’s content when adding “vegetables” to the bowl of eggs. are we supposed to drain all or just some of it? we had to take time pouring grease off after it had baked a while, and it affected the texture also to bake in such a manner. so we realized too late that you must be intending for us not to let it turn out that way, right? thanks for update or response. other than that this was a good dish.

It might not have been to your taste, but it wasn’t written specifically for you and to rate a great recipe 2 stars simply because of your own personal preference isn’t very polite or helpful when the recipe itself was not to blame.     I made it for Christmas morning today, and I used hash brown pattiesโ€ฆ and it still was a hit! I couldnโ€™t get any of the other kinds of frozen potatoes bc of all the shortages, so I used what I had. I cooked the patties before putting them in the oil sprayed casserole dish. I also left out onions and peppers and just put garlic in the cooked bacon and itโ€™s grease.     Iโ€™ve had a few different casseroles in my life; none made by myself. I just got a craving for one found this recipe online it was so easy and fun to make. I didnโ€™t have frozen potatoes so I used fresh ones just cooked them while I was also cooking the bacon. I also put some leftover spinach from the nights before dinner. I made half portion of this recipe but the cook time was the same. Needless to say it was an extreme hit!!     Have made this many times and itโ€™s always a hit.
    Prep time is definitely not 15 minutes, probably closer to 30-45 depending on how slow you chop, if you use fresh potatoes (which was my error but now I prefer it), and how fast you cook the veggies.
    I bake this the night before serving it. I find itโ€™s better the next morning, reheated. It also makes it easier for morning get togethers because I am not a morning person. We love it with Cholula and/or avocado.

    This recipe was OK. It is better as a “base” recipe where you then add things to it. I added oregano, basil, and thyme to give it some spice as well as some crushed red peppers, salt, and pepper. I tripled the amount of peppers, one seemed too sad for an entire casserole. I also added more potatoes to further fill up the pan. Maybe it’s the way I cut the potatoes, but with the recommended cook time of about 50 minutes they did not cook all the way. They could’ve used an additional 15-20 minutes. Overall, a good recipe to build off of but I wouldn’t make it as is.

    I invite my in-laws over for brunch every year on my husband’s birthday and this year I made this dish using leftover ham in place of the bacon. Everyone loved it, it was a huge success. There were only two servings left and we had them the next morning. Just as tasty the next day.

  170. This did take much longer to cook for me. I cooked per instructions for 20 minutes,then another 30. Eggs were still runny. It wasn’t the cheese. Put in for another 15 minutes, still not done. So now it’s in for another 20. Hopefully that will do it. Can’t wait to try it.

    1. Definitely. I don’t thaw, just microwave, and sometimes air fry after microwave. Not as good as prefrozen, but makes perfect breakfast burrito filling.

    2. Iโ€™m subbing the bacon with ham. Can I skip cooking veggies before baking? Wonโ€™t it cook in the oven with the egg mixture?

    HELP! I use these egg casserole recipes a lot. Love them! I could really use some advice, though. I would like to cook them in an 18x12x2 pan rather than a 9×13. Can this be done? What adjustments in time and temperature are necessary? Thanks much!

    1. You would be better off making a large amount in two 13 x 9 pans. In a larger pan the edges will be way overdone by the time the center is cooked.

    Love the recipe and so does the family. Is there any way to change the measurements to English or Australian measurements from the American? ie. Fahrenheit to Celcius and lb pounds to kilos etc? It sure would make cooking a lot simpler for folks in the Southern Hemisphere.

  180. I only had fresh potatoes (not frozen) so I parboiled and diced them and then put them on the bottom of the dish. Then I layered in the bacon, veggies, and cheese and poured the egg mixture over the top. Turned out delicious!

When I imputed the individual items into my fitness pal, the individual servings came out to a little over 350 calories a serving, so be aware if you are watching calories that using generic values will be a hundred calories more per serving (which with the amount of bacon makes more sense).

    Delicious. Thank you! This is the best tasting breakfast casserole I’ve ever made! I did make a few minor changes: I didn’t have Frozen potatoes so I just cut fresh potatoes and roasted them slightly in the air fryer with some broccoli and this time I had a little leftover cauliflower that I threw in, as I desired more veggies. Also, I used beef bacon. I’m making my second one this morning, it’s becoming a weekly bake in my house that we eat for days! So so good!

  189. After reading multiple comments about time- i raised the temperature to 365ยฐ and the timing as perfect. I also waited to add the remaining cheese. I sprinkled it over the bacon when i put that on top at 20 minutes.

    I made this with cauliflower instead of potatoes to lower the carbs and it was delicious. I bet it taste even better with potatoes.

    1. Cut them and then boil them for about five minutes before putting them in the dish. They will come out perfect

    1. If you are using fresh potatoes, I would pre-cook them a little before adding to the casserole. Just make sure they aren’t fully cooked or they will get mushy.

    1. You can reheat in the oven in a baking dish at 350. Bake until heated through, don’t over cook. The time will vary depending the portion you are rehating. You can reheat individual portions in the microwave.

    1. You can use shredded hashbrowns. They might cook a little faster, but I am guessing it will be close to the same time.

    1. You can serve in individual portions. Wrap in plastic wrap and then foil. Place in freezer container or bag and freeze. Thaw and reheat!

  198. I have made this recipe two times and the second time, I used frozen diced potatoes instead of shredded has browns and it really made a difference. It was great both times but I would advise using the cubed potatoes. I love this recipe and all the men that eat my food LOVE it as well!!! (I have THREE adult sons that sometimes eat with me!)     I was given 3 dozen farm eggs and wanted to immediately use some of them. I made this recipe and I am really glad that I did. It is delicious. I have another 6 servings ready to go into the freezer.

    Next time (there WILL be a next time!)I might throw some Rotel in to add a bit of heat.

    1. Rotel is an excellent ideal… I served mine with Pace Picante’ sauce which was good but to have it already cooked in would have been better.

    Recipe is delish. I used Simply Hash Browns and browned them slightly on the stove first. Substituted a can of Herdez salsa Casera (drained) for the red pepper and used cheddar Jack cheese for a more southwest style. Next time Iโ€™ll probably add some jalapeรฑo. Website is terrible, hence the 4 stars. Kept refreshing or freezing and pop-up ads that wouldnโ€™t close.

    1. Frozen potatoes work great, you don’t have to thaw them. You can make the day of or the night before and reheat.

    Thanks for this recipe! I made this for a small brunch we hosted and it was a huge hit. I used the frozen diced potatoes, which were a great size and texture. I did about half and half bacon and mild breakfast sausage and same with the cheddar cheese half and half sharp and mild. I forgot to add the garlic which wasn’t an issue, and used an orange bell pepper because that is what we had on hand. It was really good. I would absolutely make again and consider adding jalapeno or red pepper flakes next time for a bit of a kick.
