Pin ItMy classic cucumber salad is one of my favorite simple summer salads, but when I am wanting a cucumber salad that is a little more satisfying I love making this White Bean Cucumber Salad.
The salad only takes about 10 minutes to make. Combine white beans, cucumbers, radishes, red onion, and fresh dill in large bowl. Whisk together a simple lemon dressing, pour it over the salad, and toss until the salad is well coated.
This salad is fresh, satisfying, and refreshing. It is the perfect side dish for a hot summer day. It goes well with any meal and is one of those salads you will make over and over again. It is quick and easy and full of flavor. I guarantee you will LOVE it!

Salad Ingredients
- Cucumber– I recommend using an English cucumber. Slice it lengthwise and cut it into 1/4-inch slices. Persian cucumbers are also a good option, but you will need more of them because they are smaller.
- Radishes– thinly sliced and halved.
- White beans– I use canned cannellini beans, which you can find at any grocery store. Great Northern or Navy beans will also work. Rinse and drain the beans before using.
- Dill– fresh dill adds great flavor to the salad, don’t skip it!
- Red onion– you can use pickled red onions or thinly sliced red onions.
Dressing Ingredients
- Olive oil– the base of the dressing.
- Lemon juice– so fresh!
- Red wine vinegar– adds a sweet tang to the dressing.
- Garlic– minced.
- Honey– to slightly sweeten the dressing.
- Dijon mustard– for flavor and it helps emulsify the dressing.
How to Make White Bean Cucumber Salad
- In a large bowl, combine the cucumber, radishes, white beans, dill, and red onion. You can use pickled red onions or regular sliced red onion. I like both!
- Set aside while you make the dressing.
- In a small bowl or jar, combine the olive oil, lemon juice, red wine vinegar, garlic, honey, Dijon mustard, salt and pepper. Whisk until well combined.
- Pour the dressing over the salad.
- Toss the salad together until well combined. Serve immediately or let sit for 30 minutes so the flavors can meld.

Variations

- Use pure maple syrup to sweeten the dressing if you need the recipe to be vegan.
- Enjoy with pita chips or pita bread.
How to Store
This salad is best the day it’s made, but will keep in an airtight container in the refrigerator for up to 2 days. The cucumber slices will soften the longer the salad sits.

White Bean Cucumber Salad
Ingredients
For the salad:
- 1 English cucumber, sliced lengthwise and cut into 1/4-inch slices
- 5 radishes, thinly sliced and halved
- 1 15- ounce can of white beans, rinsed and drained
- 1/4 cup finely chopped dill
- 1/4 cup pickled red onions or thinly sliced red onion
For the dressing:
- 1/4 cup olive oil
- 1 tablespoon lemon juice
- 1 tablespoon red wine vinegar
- 1 garlic clove, minced
- 1 teaspoon honey
- 1/2 teaspoon Dijon mustard
- Kosher salt and black pepper, taste
Instructions
- In a large bowl, combine the cucumber, radishes, white beans, dill, and red onion. Set aside.
- In a small bowl or jar, combine the olive oil, lemon juice, red wine vinegar, garlic, honey, Dijon mustard, salt and pepper. Whisk until well combined.
- Pour the dressing over the salad and toss well. Taste and season with additional salt and pepper, if necessary. Serve.
