I love making baked oatmeal for breakfast. I have several favorite recipes; classic baked oatmeal, blueberry, apple cinnamon, peach, carrot cake, peanut butter banana, and more!

During the spring and summer months, when strawberries are in season, I loving making Strawberry Baked Oatmeal. This oatmeal reminds me of the strawberries & cream oatmeal packets I used to eat as a kid, but MUCH better. So if you like the strawberries & cream oatmeal, you have to try my homemade version. Nostalgic, but even more delicious!

This oatmeal is bursting with strawberry flavor because I blend fresh strawberries with milk to create a strawberry milk that gives the oats maximum strawberry flavor.

I also add chopped up sweet and juicy strawberries to the oatmeal. mixture and top the baked oatmeal with sliced strawberries before baking to make the oatmeal extra pretty!

The oatmeal is hearty, satisfying, slightly sweet, and loaded with strawberries. Serve with a drizzle of maple syrup, a dollop of yogurt or whipped cream, or a sprinkling of nuts!

And the best part? This is a great meal prep recipe. Make a pan and reheat all week for breakfast! You will wake up excited to eat this oatmeal, it is such a treat!

Ingredients

  • Oats– use old fashioned oats. If you need the recipe to be gluten-free, make sure you use gluten-free oats.
  • Baking powder– make sure it is fresh!
  • Salt– to enhance all of the flavors.
  • Strawberries– For best results, use fresh strawberries that are red, ripe, and juicy!
  • Milk– I use unsweetened vanilla almond milk, but any milk will work. Dairy, cashew, oat, soy, or coconut milk.
  • Butter– melt the butter in the microwave or in a pan on the stove.
  • Eggs– use 2 large eggs. The eggs will add protein and help bind everything together.
  • Maple syrup– to sweeten the oats.
  • Vanilla extract– always use pure vanilla extract.

How to Make Strawberry Baked Oatmeal

  • Preheat the oven to 350 degrees F. Grease an 8×8-inch baking pan with cooking spray and set aside.
  • In a large bowl, combine the oats, baking powder, and salt. Set aside.

  • Place 1 cup strawberries and the milk in a blender. Blend until smooth.

  • Pour the milk over the oat mixture. Add the melted butter, eggs, maple syrup, and vanilla extract.

  • Stir until well combined. Fold in the remaining 1 cup chopped strawberries.

  • Pour the mixture into the prepared pan. Top with sliced strawberries.

  • Bake for 35 to 40 minutes or until the oats are set and lightly golden brown. Remove from the oven and let cool in the pan for 5 minutes.
  • Cut into squares and serve.

Toppings

  • Yogurt
  • Whipped cream
  • Nut butter
  • Pure maple syrup
  • Sprinkle of your favorite granola.
  • Extra strawberries, other berries, or banana slices
  • Brown sugar
  • Sliced almonds, chopped pecans, or candied pecans
  • Fresh mint
  • Nutella

How to Store & Reheat

  • This is a great meal prep recipe because it can be made in advance. You are going to want to have a pan in the fridge at all times.
  • Keep the baked oatmeal covered tightly in the refrigerator for up to 5 days. Reheat in the microwave for 20-30 seconds and enjoy!
  • You can freeze baked oatmeal, but I think this strawberry baked oatmeal is best fresh because they strawberries get a little mushy after freezing and thawing.

  1. Recommendations on how to possibly make this a sneaky toddler recipe? How to possibly add more protein and/or veggies? Any ideas?

    1. I have a zucchini baked oatmeal, try that! You can add a scoop of protein powder. You can add chia seeds or hemp hearts. You can also serve it with a dollop of Greek yogurt.
