Start by marinating the pork in a Ziploc bag. Remove the pork from the bag and place in the center of a prepared sheet pan. Discard the marinade.

Toss the potatoes in olive oil, followed by the garlic powder, Italian seasoning, salt, and pepper.

Arrange the potatoes around the pork, then roast. Remove the pan and transfer the tenderloins to a cutting board. Toss the potatoes and cook again.

Slice the pork, garnish with parsley, and serve warm with the potatoes.
