This creamy and comforting Roasted Cauliflower Chowder is perfect for a chilly day.

you'll need:

• Cauliflower • Olive Oil • Garlic • Butter • Onion • Carrots • Celery Stalks • Bay Leaf • Dried Thyme • All-Purpose Flour • Vegetable Broth • Milk • Cheddar Cheese

Place chopped cauliflower and garlic cloves on a baking sheet. Drizzle with olive oil and toss. Season with salt and black pepper.

Cook onion in butter. Add onion and cook. Add carrots and celery and cook.

Chop roasted garlic cloves. Add garlic, roasted cauliflower, bay leaf, and dried thyme to the pot. Sprinkle flour and stir. Cook.

Pour in the vegetable broth and stir. Simmer. Stir in milk and shredded cheese. Season with salt and black pepper.
