This easy Bacon, Potato, and Egg Casserole is packed with bacon, potatoes, and cheese! It can be prepared ahead of time and is a real crowd pleaser!
you'll need:
• Bacon
• Yellow Onion
• Red Bell Pepper
• Garlic
• Eggs
• Milk
• Potatoes
• Cheddar Cheese
• Salt
• Black Pepper
• Green Onions

In a skillet, cook bacon, stirring occasionally. Remove and place on a paper towel lined plate. Chop the bacon and set aside.

Add the onion and red pepper to the skillet and cook. Add garlic and cook. Set aside.

In a bowl, beat eggs and whisk in the milk. Stir in the cooked vegetables, potatoes, and cheese. Stir in some of the bacon. Season with salt and pepper.

Pour the mixture into the baking dish and top with cheese and green onions. Bake until eggs start to set up. Add remaining bacon to the top. Bake and let stand. Cut into squares and serve.
