Roasted Red Pepper and White Bean Dip

I’ve always been a sports fan. My dad and brother taught me at a young age to love sports. I played basketball in Jr. High, but chose to be a cheerleader in high school-no laughs please. I had fun cheering and I got the best seats for free. Sometimes I got in trouble for yelling at the refs instead of the cheers, but it was all in good fun:)

I am excited for the Super Bowl on Sunday. My team (the Bears) were out of the running from the beginning, but oh well, I will still have fun watching the game. We are having some friends over which means extra mouths to feed. Yahoo! I haven’t finalized the menu yet, but I am getting closer. I guess I better hurry and decide, huh?

I think this roasted red pepper and white bean dip will make an appearance. It is easy, tasty, and healthy. I know Super Bowl parties are meant for indulging, but I always like to have healthy options available. I made this dip in the food processor and it took about five minutes. This is a no fuss dip!

The white beans make the dip nice and creamy. The roasted red peppers, lemon, rosemary, and red pepper flakes add tons of flavor. I serve the dip with pita chips, vegetables, or baguette slices. It is also good as a spread on a veggie sandwich.

If you want to offer a healthy snack on Sunday, try my roasted red pepper dip. Your guests will devour it, whether they are trying to eat healthy or not.

Black Bean Salsa-this salsa is hearty and healthy. Serve with baked chips.
Cilantro Lime Hummus-I love cilantro and lime together, this hummus is great with pita chips or baked tortilla chips.

Roasted Red Pepper and White Bean Dip

Ingredients
  

  • 1-2 garlic cloves I used 2
  • 2 14 oz. can white cannellini beans, drained and rinsed
  • 1 jar of roasted red peppers drained (I used a medium sized jar)
  • Juice of 1 lemon
  • 1 T chopped fresh rosemary basil would be good too
  • Dash of crushed red pepper
  • Salt and pepper to taste

Instructions
 

  • In a food processor, chop up the garlic. Add the beans and roasted red peppers until smooth. Add the lemon juice and fresh rosemary. Puree. Remove the dip from the food processor. Put in a bowl. Add the red pepper flakes and salt and pepper. Stir well. If necessary, add more seasonings. Serve with pita chips, bread, or use as a spread on sandwiches. Keep in refrigerator for one week.

  1. So as a homeschooling mom of 4, I shouldn’t be running off to the store–in the middle of the day–to buy ingredients for one dish. But I did! And it’s absolutely delicious! I love dips and I now I can eat it to my heart’s content. ๐Ÿ™‚ Thanks for sharing!

  3. I don’t need a sport event as an excuse to eat a good dip! I love them and have been introducing them to my children so that they get exposed to something else than salsa. Guacamole is their favorite so far… Thanks for the recipe! Enjoy the game!

  4. Love this dip. Used it instead of pizza sauce on little tortilla pizzas with goat cheese, artichoke hearts, and procciuto.

    Fantastic! I used it as a sauce for my pan fried chicken breast. It worked really well. I’m on an aleppo peppers kick so I added that. This will be a go to at our house from now on.
