Oatmeal Cookies with White Chocolate and Dried Cranberries

During the holidays I have to make my oatmeal cookies with white chocolate and dried cranberries. It is a must! They are the perfect cookie for this time of year! The dried cranberries are nice and sweet and go perfectly with the white chocolate chunks. And of course the oatmeal background is fabulous! I included these cookies in my goodie bags. Here is the recipe! The recipe below makes about 2 ½ dozen. If you need more, go ahead and double it, I did and they turned out great! Enjoy!
Oatmeal White Chocolate and Cranberry Cookies
Ingredients
- 1 1/4 cups all-purpose flour
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter at room temperature
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/4 cups old fashioned oats
- 1 cup of dried cranberries
- 1 cup chopped white chocolate or white chocolate chips
Instructions
- 1. Preheat the oven to 375 degrees F. Line a large baking sheet with a Silpat baking mat or parchment paper and set aside.
- 2. In a medium bowl whisk together the flour, salt, baking powder, and baking soda.
- 3. Using a mixer, beat the butter and sugars together until smooth. Mix in the egg and vanilla. Slowly add the dry ingredients. Mix until just combined. Stir in the oats, dried cranberries, and white chocolate chips.
- 4. Roll cookie dough into tablespoon size balls and place on prepared cookie sheet. Bake for 10 minutes or until light golden brown. Donโt let them get too doneโฆthey are better when they are soft! Let cookies sit on the baking sheet for two minutes. Transfer to a cooling rack and cool completely.

Hi! I am going to be making these cookies this weekend and I am super excited. They look so delicious. But I have a question: do these freeze well? I’m making tons of cookies this year and I’m trying to make a bunch ahead of time because i have an 8 month that likes my attention:) (I’ll only be making them a week ahead of time)

Let me say, I was very disappointed by this recipe. I have been following Two Peas for almost a year now, and have had great success with all of the recipes I’ve used. That was not the case with these cookies. Something about the proportion of the ingredients must be off. 1 cup of cranberries and chocolate chips each was WAY too much for the amount of dough, and the dough itself was dry and crumbly. Even when I was taking the cookies off of the pan I had trouble with them breaking. Overall very disappointing recipe.
EXACTLY! I couldn’t agree more! All I have now is a ball of cranberries and white chips.
Wow, these are so tasty! I love how they aren’t too sweet and can really appreciate that. ๐ These are good any season. I am eating one warm out of the oven right now.
P.s. the ingredients calls for one egg but your instructions say “eggs” ๐

Made these today for my boyfriend who is deployed and they turned out a-m-a-zing! One little change though, unfortunately I did not realize I had NO vanilla in the house, so I substituted some almond extract which gave it a great flavor. I will definitely be making these again (like, tomorrow lol). Super easy with wonderful results!

These cookies are amazing! I’m so glad I discovered your recipe. The oatmeal base is absolutely perfect. I have now made several different batches, tweaking the flavors based on what I have in the pantry. By far the white chocolate, cranberry is #1 in my house. They’re even great in the spring. These look delish! Im not sure but I think white chocolate covered cranberries are available now. Will have to look in stores. Otherwise I’m following the recipe. Maybe I will add a tiny amount of cinnamon and a little orange zest. I save myself the trouble of zesting an orange and buy the orange bits from the spice shelf in the store!
I love all of your recipes. I tried to double the recipe but the dough became too dry. Perhaps my eggs were small. In any case, I might try using only 2 cups flour and 2 cups oats next time. Happy baking to all!
Quick question: If I am baking cookies for an event 2 days ahead of time, what’s the best way to store them? Should I freeze them? Thank you ๐
My good friend Jennifer has made these cookies for me a few times. They are SO DELICIOUS. I actually prefer the cookie dough (who doesn’t?). Jen often makes them with powdered egg so the dough is safe to eat. I’ve shared the recipe a few times… it’s a keeper!
Thanks for that great cookie recipe! Loved all the great flavors and how it turned out after it baked! I added a little cinnamon to it as well. I flattened them and used a metal heart shaped cookie cutter. I baked them on convection at 325 degrees for 10 minutes. They came out a little overbaked. Should of done them for 9 min. but they were still fine. The ones rolled into balls turned out perfect!
