Cucumber and Avocado Sandwich
Updated September 11, 2019
Cucumber and Avocado Sandwich-this fresh and simple vegetarian sandwich is made with cucumber, avocado, lettuce, sprouts, and herbed goat cheese. It is great for lunch or dinner.
Did you know August is National Sandwich Month? It makes sense, it’s too hot too cook, it’s back to school time, and summer gardens are overflowing with fresh produce that are sure to enhance any sandwich. August really is the perfect time to get your sandwich on!
I am currently loving this Cucumber and Avocado Sandwich because it is fresh, simple, and the perfect meal for a hot summer day.
To make a good sandwich, You HAVE to start with good bread. We love using Dave’s Killer Bread, it is our favorite. For this Cucumber and Avocado Sandwich, I like to use their 21 Whole Grains and Seeds bread. It is loaded with whole grains and seeds. Each slice is packed with five grams of fiber and five grams of protein.
To make the sandwich, I spread herbed goat cheese on the slices of bread. Make sure the goat cheese is at room temperature so it spreads nice and easy. If you can’t find herbed goat cheese, you can use regular goat cheese and stir in some minced herbs. Basil, rosemary, or thyme would all be good options.
Next, I layer the sandwich with green goodness: lettuce, cucumbers, avocado, and sprouts. I also give the cucumber slices and avocado slices a little squeeze of fresh lemon juice. It keeps the avocado from browning and it also gives the sandwich a lovely burst of lemon flavor. Season the sandwich with salt and pepper and enjoy!
I love the green layers! This sandwich is great for an easy, no-cook lunch or dinner and it is a great way to use up those garden cucumbers.
Celebrate National Sandwich Month with this Cucumber and Avocado Sandwich. It is super duper delicious!

This sandwich is exactly what we’ve needed in our house!! We are swimming in cucumbers from our summer garden… now I know what to do with them ๐
Yay, glad you can put those cucumbers to use! Enjoy!
Looks so refreshing and full of flavor!
This healthy sandwich is totally my kinda meal!
Mine too, especially when it is hot outside!
Oh! That looks yummy!
Could you use herbed cream cheese instead?
Absolutely!
Nice summer sandwich!
Hey girl this looks oh so yummy!
I love a great veggie sandwich!
Me too!
I like the idea of using a herbed goats cheese. Great shots, the sandwich looks delicious!
Thank you!
Where is anybody able to find sprouts? I’ve been looking for them for months and none of my grocery stores here in Seattle seem to carry them anymore.
Check Whole Foods.
You can purchase a small starter kit to sprout your own at home for under $20 at most Ace Hardware stores.
I have the same problem! no grocery store in the greater detroit area that I can find (even the jimmy johns which has them on the menu doesn’t have them avail for customers)
Cynthia have you tried to grow the kit? What time of environment does it need? How successful were you?
Thanks
I got the sprouts from Food maxx. It’s a store that sells international food I don’t know if you have those in your area. Also a lot of stores would order stuff for you even if they don’t have it in stock you just need to talk to the store manager
I found three types of sprouts at my local QFC.
If I don’t like goat cheese and not a huge fan of cream cheese either, what else could I use ๐ Can’t wait to try this!!
Do you like those Laughing Cow wedges – I think they would work as they are spreadable. ย Otherwise you might just try a little mayo?
Do you like feta cheese? that’s what I used and it was awesome
I want this sandwich for lunch! Yum!
That looks so good! That’s my favorite bread too ๐
I like that you feature Dave’s Bread, it’s the only bread we buy (if I don’t bake ours). Looking forward to browsing your site for more inspiration!
It is our favorite bread too!
Love Daveโsโฆ
Almost every day I have an avocado, smoked gouda and spinach wrap with a bit of mayo. This is a great way to switch up my fav without too much effort ๐
Yum! This looks delicious! My mom used to make me a similar sandwich in my school lunches. So goood!
Love this! My dad used to make me cucumber and cheese sandwiches when I was a little girl and this totally reminded me. This is a great adult twist on those. I’ll be trying this recipe.
I hope you like it. It is my favorite!
This was a delicious sandwich! I’m vegan so I just left the cheese out. Still tasty!
I’m not a huge fan of cucumber unfortunately but my Husband LOVES it! He’ll love this sandwich. It looks so vibrant, makes me want to like cucumber, haha!
This looks lovely! I can picture me eating this on my lunch hour this summer. Thanks guys! ๐
Made this for lunch on a toasted multigrain bagel & cream cheese–so tasty! Thanks, Maria!
You are welcome! I will have to try it on a bagel next time!
It is different. Unique recipe. I try it for morning healthy breakfast.
Hi this sandwich looks amazing, could I make it up the night before as I would like to take it to work with me.
Where do you buy the bread from.
Sur
ย Beyond awesome !!!
Loveย
I love alfalfa sprouts but I can’t find them anywhere! ย I’ve looked at Trader Joe’s, Whole Foods and both of the super markets in my town! ย
Hmmm, I find them at Whole Foods.
Not a big fan of goat cheese. Was thinking about using cream cheese, but what kind of herbs should I add to it? Thanks ๐
Cream cheese would work well. Basil would be a great addition! You could add in some parsley too and a little lemon! Dill and lemon would be good too!
I’m looking forward to trying this sandwich with herbed cream cheese. ย Saw the other comments about not being able to find alfalfa sprouts in 2016. ย We have noticed this also in Oklahoma this year. ย However, we can get broccoli sprouts and Onion sprouts. ย Just interesting that alfalfa sprouts are hard to find . . .ย
Such a tasty treat! Perfect summer sandwichย
I love this, but I have a problem with sodium intake. My blood pressure goes up when I take salt. So I cook without salt.
….such is life….
There is a sandwich called a “Bible Bread Sandwich”. You use Spike seasoning “without salt” cabbage slaw, unsalted sunflower seeds, a white cheese, and sprouts on a pita, or wrap. Does anyone have a great recipe for this sandwich??? I use to buy them at a Herb Shop. They were awesome! A couple recipes online are close.
Thanks for sharing Sandwich information i am so impress about details making a sandwich. It will be really tasty.
Yummy!! I’ll try it today, thank you.
I just made this for my sister and I for lunch today. It was very very tasty! I added two separate dressings, cilantro jalapeรฑo and a lemon tahini to the ghost cheese. It really kicked up the flavor! I also subbed rocket for the sprouts and a bib lettuce for for the other greens. All in all it was great! Will definitely make again on a wrap or other bread.
Love all these type sandwiches! Avocado & cucumber how can you go wrong! This looks fantastic!! Yummy & healthy!
Thank you for sharing!!
