I am sure all of this talk about cookies is making you hungry, so today I am sharing a recipe from Holiday Cookie Cravings–Soft Gingersnaps with White Chocolate Cream Cheese Frosting. These are one of my favorites from the book. Ok, I love them all, but gingersnaps are a MUST make every holiday season and the white chocolate cream cheese frosting makes these gingersnaps extra special. Soft Gingersnaps with White Chocolate Cream Cheese Frosting are perfect for cookie swaps, sharing with friends and family, or eating by the dozen.

Soft Gingersnaps with White Chocolate Cream Cheese Frosting
Ingredients
- For the gingersnaps:
- 2 1/3 cups all-purpose flour
- 1 teaspoon baking powder
- 1 โ4 teaspoon salt
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1 โ2 teaspoon ground cloves
- 1/8 teaspoon ground nutmeg
- 3 โ4 cup unsalted butter at room temperature
- 1 cup light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 โ4 cup molasses
- For the frosting:
- 4 ounces cream cheese at room temperature
- 4 tablespoons unsalted butter at room temperature
- 3 ounces white chocolate chopped and melted
- 1 teaspoon vanilla extract
- 3 cups powdered sugar
Instructions
- 1. Preheat oven to 375 degrees F. Line a large baking sheet with a Silpat baking mat or parchment paper. Set aside.
- 2. In a large bowl, whisk together the flour, baking powder, salt, and spices.
- 3. In the bowl of a stand mixer, beat the butter and brown sugar until smooth and creamy, about 3 minutes. Add in the egg and vanilla extract. Mix until well combined. Add in the molasses and mix until combined.
- 4. With the mixer on low, slowly add the flour mixture. Mix until flour disappears.
- 5. Form the dough into tablespoon sized balls. Place the cookie dough balls on prepared baking sheet, about 2 inches apart.
- 6. Bake for 10-12 minutes or until cookies are set, but centers are still soft. Let the cookies cool on the baking sheet for two minutes, then transfer to a wire cooling rack to cool completely.
- 7. While the cookies are cooling, make the frosting. In the bowl of a stand mixer, cream the cream cheese and butter on medium-high speed until smooth. Add the melted white chocolate and vanilla extract. Beat until smooth. Reduce the mixer speed to low and add the powdered sugar until smooth.
- 8. Using a knife, frost the gingersnaps with frosting.

So, I made the soft Gingersnaps today – gluten free, because that’s what my family needs. I didn’t change anything about the recipe besides using a mixture of gluten free flours and I beat it a little extra (gluten free stuff needs that sometimes because it doesn’t have the gluten to help it out). They turned out AMAZING!! If I didn’t know they were gluten free, I wouldn’t be able to tell by looking at them – they’re fluffy and crinkly and awesome! I’ll frost them this evening, but I know – this one’s a keeper! Thanks for sharing the recipe. ๐

I tried the recipe the first time and it was over done hard as a rock. I tried it the second time and it was delicious. I enjoyed making it, great recipe. I added extra grated ginger to give it a more zin ๐
