Coconut Granola

Do you ever have those days where you are super busy, but feel like you get nothing done? That has been happening to me a lot lately. The days go by so quickly because I am so busy, but by the end of the day, I still don’t feel like I’ve accomplished anything.
Last week, I was running around like crazy trying to cross things off of my “to do” list, but Caleb didn’t want mama to work. He only wanted to play, so I put my “to do” list aside and we went to the park. When we got home, Caleb took a nap and I decided I was going to make homemade Coconut Granola and forget about everything else. I know granola is super easy to make, but for some reason, I always feel a sense of satisfaction after making a batch. I needed a little satisfaction, so I put on my apron and made a batch of Coconut Granola.
This granola has a triple dose of coconut-coconut oil, coconut extract, and shredded coconut. If you haven’t tried coconut oil, you need to. I am obsessed. I bought a jar from Trader Joe’s when we were in California and I am hooked. It is SO good in this granola.
The granola is sweetened with pure maple syrup. Splurge on the good stuff for this recipe. I promise it is worth it. I added in chopped almonds and pepitas for a little crunch.
I love eating Coconut Granola with Chobani Greek yogurt and fresh berries. It is the perfect summer treat. It is also good by the handful. I keep the granola in a large jar on our counter and it doesn’t last long. I can’t walk by without grabbing a handful of granola. It is too good!
This Coconut Granola also makes a great gift. Make a big batch and share with your family, friends, and neighbors. Fill Weck or Mason Jars with granola, add a ribbon, note and you are set! Such a cute, easy, and tasty gift!
At the end of the day I was content. I didn’t tackle my “to do” list, but I made a killer batch of Coconut Granola and that was good enough. Sometimes all you need is a little homemade granola. I hope you enjoy this Coconut Granola as much as I do.
Coconut Granola
Ingredients
- 2 cups old-fashioned oats, or gluten-free oats
- 3/4 cup shredded sweetened coconut
- 1/2 cup chopped almonds
- 1/3 cup pepitas
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 4 tablespoons coconut oil, melted
- 1/2 cup pure maple syrup
- 1 teaspoon vanilla extract
- 1/4 teaspoon coconut extract
Instructions
- Preheat the oven to 300 degrees F. Line a large baking sheet with a Slipat or parchment paper. Set aside.
- In a large bowl, combine oats, coconut, almonds, pepitas, cinnamon, and salt. In a small bowl, whisk together coconut oil, maple syrup, vanilla, and coconut extract. Pour liquid mixture over dry ingredients. Stir until dry ingredients are well-coated.
- Pour the granola mixture onto the prepared baking sheet. Spread granola into an even layer. Bake for 30 minutes or until granola is golden brown, stirring every 10 minutes. Let granola cool completely. Store in an air-tight container for up to 1 month.

My favorite part of this recipe is that it says “store in an air-tight container for up to 1 month.” A month?! Hah! I’m lucky if it lasts three DAYS in this house! EXCELLENT granola recipe! I’ve lost track of how many times I’ve made it since it was posted on “75 healthy recipes to kick off 2013” ๐

This is the best granola recipe I’ve made and agree, the coconut makes it. I left out the coconut flavoring (bc did not have any) and used frozen coconut. Thanks and really looking forward to trying your Salted Caramel Chocolate Chip Cookie recipe.

Made it tonight subbing agave for maple syrup. I am a coconut freak and this is awesome! a new favorite fir sure! And good for you for dropping work to spend time with a little one. I miss those days with my now 10 and 13 year old boys. Goes by so scary fast!
Cut the coconut oil to 2 1/2 T, omitted the brown sugar and cut the maple syrup by half. This is the third time I’ve made it and these are my modifications for success! I also prefer pecans to almonds. Enjoy, it’s delish! Thanks for posting.

Great recipe! The coconut taste is perfect. I am trying to watch sugar with being pregnant, so only used 1/2 of the maple syrup, and used coconut palm sugar rather than brown- it still came out amazing! Thanks for sharing this recipe!
Why do you need brown sugar when you have maple syrup? Maple syrup is very sweet as it is, and is natural. Regular sugar is not healthy and is high in the glycemic index. If you need it so sweet I would suggest agave syrup.
This recipe has a very high sugar content with the sweetened coconut, brown sugar and maple syrup. The least you could do would be to use unsweetened coconut. When you add the Chobani yogurt which is GMO (and beginning in 2014 not being carried by Whole Foods) you have a very healthy looking recipe that is actually very unhealthy.
Bruce, I just recently found out about agave nectar and it is really not a good sweetener substitute; it has a highly processed concentration of fructose which is really bad for your body.

This is the BEST granola! I had my friend forward the recipe to me after I tried a batch she made. I now make it all the time and have shared the recipe with many friends who have also succumbed to love at first bite from this delicious granola ๐ I have more of if a salty tooth than sweet tooth, so I just pop in an additional cup of oats when I make it because I find it a tad too sweet for me. Do u use the coconut oil with flavor or unflavored for this recipe?

I just wanted to stop by and say that this is now my go to granola recipe in my house!! The whole family loves it! I have tried different nut combos, unsweetened coconut, omitting the brown sugar (I love the depth the brown sugar gives tho) and it always comes out great. Thank you so much for a great granola.
Fabulous recipe and I didn’t have brown sugar (doesn’t really need it) or coconut extract plus I added walnuts, cashews, sunflower and flax seeds (no measurement but perfect) didn’t even have to add any more oil just a little extra maple syrup. I am in granola Love!! Thank You!

I also used unsweetened coconut because that’s what I had. It really doesn’t need to be any sweeter. It was just right and still satisfied my sweet tooth which developed instantly from smelling it cooking, entire house smelling like a cookie bakery.

If anyone freezes their maple syrup like I do (it gives it the perfect syrupy texture and it doesn’t freeze!), be mindful when adding it to the coconut oil! I didn’t even think about it, and my oil re-hardened almost instantly. I had to put it in a pan and remelt it. No biggie but it could have been avoided ๐

I love this granola recipe. I have added dried cranberries to the recipe and doubled everything except the syrup and the oil. I am watching fat in all foods and thought this would be less fat. I use t every morning on greek yogurt.
Can you skip the coconut extract?
Yum! This looks great. I have been wanting to make homemade granola. I like granola, and have bought it from the store before. However, I have been trying to make everything homemade if I have the time to. It makes me feel better since I know exactly what is going into it- plus you can customize it! That’s always a plus.

Thanks for posting this recipe and I wanted to give it a shout out since it has been up for a while. I decided to try making my own granola after going through the ingredients on the $10 small bags of organic granola and still finding some preservatives. I want organic, and I want to recognize all of the ingredients. I do a couple modifications, and we love it. I use 3C oats, 1C unsweetened coconut, cut the brown sugar out and use almond extract instead of coconut because I can’t find organic. I cook it at 350 (probably because of altitude). ย Far and away the best, best ever. ย There is no need for preservatives since it never lasts long.

I make this recipe all the time and it is a huge hit in my family! The dry/wet proportions are perfect and I have used this recipes to fix other recipes I have found online that didn’t turn out quite as nicely as this.
This is the only granola I make. The only exception is that I use unsweetened coconut and I add walnuts or almonds. So easy and quick! Everyone loves it!

Thank you, thank you, thank you. This is a super recipe-and so flexible. I have been making this granola for years- it’s my go- to for granola. The triple coconut effect offers a triple dose of chewy, nutty goodness, that drives the foundation of this cereal. It’s not super sweet but naturally sweet. I often exchange the nuts with pecans, walnuts, the possibilities are endless. I have to double this recipe every time – there is almost always someone who needs a small quick gift, and putting 2 cups of this amazing granola in a bag or glass jar, is such a great and personalized gift from your own kitchen and heart. This is the first time Iโve made granola and Iโm absolutely addicted to this recipe. I would love to have more chunky pieces. How would I alter the recipe to accomplish this?
Don’t stir the granola and let it cool completely, then you can break it into clumps.
