Vegetable Lime Chickpea Chili

Last week packed up our mini-van and drove to Illinois to visit my family. Josh helped my dad with a home renovation project while I spent most of my time in the kitchen. I was much more useful in the kitchen. I don’t do so well with sheetrock, sanding, and painting. I don’t think the guys minded because every time they came into the kitchen they had something yummy to sample.

One night, we had family and friends over for a soup and chili party. I made Vegetable Lime Chickpea Chili from our good friend Jenny’s new cookbook, The Picky Palate Cookbook. When I saw this chili recipe in Jenny’s book, I immediately bookmarked it. I love a chili that is packed with vegetables. Plus, this recipe has chickpeas, cilantro, and lime-all of my favorites.

This chili can be made in about 30 minutes, which makes it perfect for a weeknight meal. All of the ingredients get tossed into one large pot so there isn’t a lot of clean-up. I also love this recipe because it is vegan, gluten-free, and vegetarian-which makes it perfect for serving a crowd. And if you are a meat lover, I promise you won’t miss the meat. This chili is full of flavor and very satisfying. And the kiddos will love all of the colorful vegetables. Caleb devoured his bowl of chili.

Everyone at the party loved the Vegetable Lime Chickpea Chili. It was actually the first thing to go! We are going to make this chili all winter long. It’s already a family favorite. Thanks Jenny for the fabulous recipe!

Vegetable Lime Chickpea Chili

An easy, healthy, and flavorful chili the entire family will love!

Ingredients
  

  • 2 tablespoons extra-virgin olive oil
  • 1 1/2 cups finely chopped white onion
  • 1 1/2 cups chopped zucchini
  • 1 1/2 cups yellow squash
  • 1 cup chopped mini sweet peppers
  • 1 8- ounce package baby bella mushrooms sliced
  • 2 tablespoons minced garlic
  • 2 15- ounce cans chickpeas drained and rinsed
  • 1 28- ounce can diced tomatoes
  • 2 cups vegetable broth
  • 1/2 cup chopped fresh cilantro leaves
  • 3 tablespoons lime juice
  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper

Instructions
 

  • 1. Heat the olive oil in a Dutch oven or large pot over medium heat. Add the onion, zucchini, yellow squash, sweet peppers, and baby bells and cook, stirring, until tender, 5-8 minutes. Add the garlic and cook, stirring, for 1 minute. Add the chickpeas, tomatoes, broth, cilantro, lime juice, cumin, chili powder, salt, and pepper, stir to combine and cook until hot, about 5 minutes. Reduce the heat to low and simmer until ready to serve.

  1. My favorite weeknight meal is pizza – made by me. I have no shame in using Boboli pizza crusts to save time, but the toppings are all me. My favorite is red onion and yellow pepper – I swear, it is the best sauteed combination! Try it sometime!

  2. Pizza. My husband and I trade off making the dough, and the other person chops the toppings and puts it all together. It’s delicious and easy!

  3. I love weeknight mexican! There are so many options of easy taco, burrito and enchilada dinners that I’m always making something new & it’s usually quick!

  4. Anything fast and easy! Crockpot recipes are the best, Cranberry Pork Roast or Taco Soup are two of the quickest.

    Just discovered your blog through another and love your recipes!! Would love to cook my way through your book. I laughed when someone had mentioned that they had dog-eared so much of your book that they decided to quit and just try cooking it all. I am guessing I would agree.

  5. My family pretty much eats anything I put out during the week… I like pasta for its convenience, but soups are good too. If my son had his way, he’d eat paninis! My husband would eat Mexican (the spicier the better) and my daughter would prefer a big salad or lots of veggies! One of the best weeknight dinners is Breakfast for dinner! Yum! I love your recipes and I love Jenny’s too! Would love to have this cookbook!

  6. My favorite weeknight meal is a salad! It’s so easy to throw together ingredient fom you fridge one there’s a leafy base.

  9. Thai chicken stir fry: the secret is red curry paste which makes stir fry so easy and tasty and I can even throw in a bunch of vegetables! A little goes a long way.

  10. If it’s just me, then my go-to weeknight meal is huevos rancheros with a small salad. So quick, easy, and delicious!!

  11. Our go-to weeknight meal is Nachos! Add beef, chicken, chili, black beans, corn…whatever is leftover. I love diced cucumbers on mine!

  12. Our favorite weekday meal is probably something Mexican – tacos, quesadillas or burritos. Easy and the kids eat it up!

  13. Our favorite week night meal is CHEESE/ONION/ROASTED RED PEPPER STRIPS/ ENCHILADAS with a favorite fresh or store purchased SALSA & I serve some sort of beans as a side dish. YUMMY! I’ve made them so many times that it only takes minutes & everyone loves them.

    When I ask for ideas for dinner the answer is most always “CHEESE ENCHILADAS.”

    Iโ€™ve been making this soup recipe for years. My kids and husband love it. I love the chili spices, itโ€™s a fun twist on a vegetable soup!

    I make this all the time, have for about 8 years nowโ€ฆ you wonโ€™t regret it. Best vegan soup out there
