Cookie Recipe for you. They are super yummy.
Rolo Candy Cookies
1 c butter, softened
1 c plus 1 Tbsp sugar (divided)
1 c packed brown sugar
2 eggs
1 tsp vanilla extract
2 1/2 c flour
3/4 c baking cocoa
1 tsp baking soda
1 1/4 c chopped pecans, divided
1 package Rolo candies (13. oz)
4 squares (1 oz each) white baking chocolate, melted
In a mixing bowl, cream butter, 1 c sugar and brown sugar. Add the eggs one at a time, beating well after each addition. Beat in vanilla. Combine the flour, cocoa and baking soda; gradually add to the creamed mixture beating just until combined. Stir in 1/2 c pecans. Shape a tablespoonful of dough around each candy, forming a ball. In a small bowl, combine the remaining sugar and pecans; dip each cookie halfway. Place nut side up 2 in. apart on greased baking sheets. Bake at 375 for 7-10 minutes or until tops are slightly cracked. Cool for 3 minutes before removing to wire racks to cool completely. Drizzle with melted white chocolate.
Yield: about 5 dozen.

I would point out that SODIUM is a very important ingredient on your list of items that should be carefully monitored also.
Making granola with a processed cereal is especially surprising. It’s astounding how much SODIUM is in those boxes from the grocery store! I make my own granola also-very similar to yours, and it takes a bit more effort than just mixing up grocery-store boxes of ’so-called’ healthy cereals and dried fruit!!!!
Just a hint when people think using ‘boxed’ broths and other processed foods!
Just found your wonderful website tonight. I have tried and tried to get “the rest” of your Baked Oatmeal recipe, but for some reason, I only get the yummy picture and your story about it…….but no directions. Not sure why, but……can you help me? Thank you.

I love your blog. So far my favorite dish I have made is your granola. I have tried many recipes over the years, some great, some not so great. This is by far the best, and is our favorite. I was wondering if you could re-post or send your baked oatmeal recipe. I can only read about it and don’t see the actual recipe. Thanks so much for all of the great recipes.
