The cookies are rich, decadent, and have a few fun mix-ins: chocolate chips, mint chips, and chopped up mint Oreo cookies. The refreshing mint twist is SO good!
The green mint chips and mint Oreo chunks add pops of green color to the dark chocolaty cookies. I love making these cookies for St. Patrick’s Day because they are so festive, but they are good all year round. I am always up for a good chocolate mint cookie!
The cookies are good on their own, but if you want to go all out and add a little more green to the mix, you can make ice cream cookie sandwiches. Take two cookies and sandwich mint chocolate chip ice cream in the center. YUM!

Cookie Ingredients
- All-purpose flour– make sure you don’t pack your flour when measuring. Fluff, spoon, and level!
- Baking soda– make sure it is fresh!
- Salt– a must!
- Cocoa powder– use a good quality cocoa for the best chocolate flavor. You can use regular unsweetened cocoa powder or Dutch processed.
- Butter– I use unsalted butter so I can control the salt in the recipe. Make sure the butter is at cool room temperature and not too warm.
- Sugar– you need granulated sugar and brown sugar.
- Eggs– I always use large eggs in my cookie recipes.
- Vanilla extract– pure is the way to go!
- Mint Oreo Cookies– look for them in the cookie aisle by the regular Oreos. Thin Mint Girl Scout cookies would also be good.
- Chocolate chips– I use semi-sweet, but dark or milk will work too. Use your favorite.
- Guittard mint chips– I love these chips, but they can be hard to find. Whenever I see them, I stock up! If you can’t find them, you can chop up Andes chocolate mints.
- Flaky sea salt– for sprinkling on cookies
Recipe Steps
- Preheat oven to 350 degrees F. Line a baking sheet with parchment paper or a Silpat. Set aside.
- In a medium bowl, whisk together the dry ingredients and set aside.
- With a stand mixer or hand mixer, cream the butter and sugars together until smooth. Add in eggs and vanilla and mix until well combined.
- Add the dry ingredients and mix on low until just combined. Don’t over mix.
- Stir in the chopped Oreos, chocolate chips, and mint chips. Drop cookie dough onto prepared baking sheet, about 2 inches apart.
- Bake cookies for 10 minutes, or until the cookies are set around the edges, but still soft in the center. Don’t over bake the cookies. They will set up as they cool.
- Remove from oven and let sit on baking sheet for 3 to 5 minutes. Move to a cooling rack and cool completely.
Storing the Cookies
Once the cookies are completely cooled, store in an airtight container on the counter for up to 3 days. You can also freeze the baked cookies for up to 3 months. Make sure they are in a freezer container or tightly sealed freezer bag so they stay fresh.
You can also freeze the cookie dough. I love keeping cookie dough balls in the freezer so I can bake fresh cookies anytime and all the time.
To freeze cookie dough, scoop the cookies into balls and place on a baking sheet or tray. Put in the freezer until the balls are firm. Transfer the balls to a freezer container or bag and freeze for up to 3 months. When ready to bake, remove from the oven and add a few minutes to the baking time.

Chocolate Mint Oreo Cookies
Ingredients
- 2 1/3 cups all-purpose flour

- 3/4 cup Guittard mint chips (or chopped up Andes mints)

I couldn’t find the mint chips so substituted Andes mint candies for both chips. They are fabulous. Will look at a specialty store for the chips next time just to taste the original

These are absolutely delicious!! Couldn’t find the Guitard chips so I used Andes baking chips. I highly recommend them!! Especially for the holiday season!!!

Where do you purchase your Guittard mint chips? Do you use any other Guittard chips? I’ve been on the search for their products, and you wouldn’t believe how hard it is to find their chips online and in stores!
These look fabulous—-but where do you buy the Guittard mint chips? There are none in my town it seems–what stores sell them? I will be in NYC next week–any thoughts on where to buy them? I cant wait to make these…
I buy the Guittard chips at Dan’s Market or Smith’s-stores in Utah. I haven’t had a problem finding them. I hope you can find some near you! Other brands of mint chips will work too!
My mother and I just made them and loved them! She made them for a bakesale at her job and I brought them to the kids of my marching band, and both were gobbled up! The only comment on the recipe itself we have are: one batch made 4 and half dozen instead of the promised 3 and 1/2. Not that we’re complaining, but a headsup. Also, they took about twice as long to cook.
One more thing, we used Ades’s chocolate mint chunks, like the mints you get from the Olive Garden, and they worked just as well.

Silpat is the only way to bake cookies. Being a consultant for Demarle at Home, I would never use anything else. Demarle is the maker of the Silpat! They will come out perfect everytime. Anything Mint is my favorite….I will be baking some of these for sure..
Lovee the Guittard mint chips and the cookie overall…….but I’m not sure what I did wrong because they did not flatten the way the picture looks above. They stayed the shape of the scoop. either way it was very delicious. Can somebody help as to why they didn’t flatten…I am a perfectionist and I wont rest until i get them right!! lol

I can usually find them at Dan’s in Salt Lake City or Winco. I hope that helps! They are Guitard brand.

I made these late last night to share with others this weekend. My dear husband predicts they’ll be a big hit! I ve baked thousands of cookies over the years, and this recipe gave these deep dark chocolate mint cookies a new twist with the combo of add-ons. No mint chips to be found anywhere locally, so I subbed with equal measure of mint m&ms. Yield was 49 cookies! I ground sea salt delicately over each before placing in oven. Very nice touch to this delectable cookie. Impressed by its “chunky” presentation as well as the perfect balance of chocolate and mint. Kudos to you for this keeper recipe!!
I made these today with the mint Oreos. They are excellent!!! I used the medium Pampered Chef cookie scoop and got 53 cookies. I highly recommend this recipe.
I was hoping they would look as colorful as the picture.. no such luck, did you press more cookie into the tops before baking? Mine were all plain brown on top. Disappointedโฆ
