Pin ItAvocado toast is the trendy thing to eat right now. I don’t want it to be trendy though because it is my favorite! I eat avocado toast almost every day. I don’t want it to go out of style because I need it in my life. So, I am calling avocado toast a classic. It is the new black and it is here to stay!
And classic doesn’t mean boring. I just made Caprese Avocado Toast and I am telling you it is FAR from boring. It is THE avocado toast of the summer!
Caprese Avocado Toast combines two of my all-time favorite things, caprese salad and avocado toast. Simple, yet genius! I don’t know why I haven’t been eating this ALL of my life. The flavor combination is perfection!
Summertime is the perfect time for this toast too! Tomatoes are soooooo good right now and our basil plant is exploding! Plus, it is beyond easy to make. No cooking is involved, unless you consider toasting the bread cooking, but I don’t. My trusty little toaster does all of the work, not me! And this toast is good anytime of the day, for breakfast, lunch, snack time, dinner time, ALL of the time!

Caprese Avocado Toast
Ingredients
- 2 ripe avocados
- 2 teaspoons fresh lemon juice
- Sea salt and black pepper, to taste
- 4 slices bread, toasted
- 4 ounces fresh mozzarella, sliced and cut into pieces, to fit the bread
- 1 cup grape tomatoes, halved
- 1/4 cup basil leaves, roughly chopped
- Balsamic Glaze, for drizzling
Instructions
- Cut the avocados in half, remove pit, and scoop the flesh into a small bowl. Add the lemon juice, sea salt, and black pepper, to taste. With a fork, mash the ingredients together, keeping the texture slightly chunky.
- Spread the mashed avocado evenly onto toasted bread slices. Top with fresh mozzarella slices, tomatoes, and basil. Season with additional salt and pepper, if desired. Drizzle with balsamic glaze and serve immediately.
- Note-I like to use whole grain bread. If you need the recipe to be gluten-free, use gluten-free bread. If you don’t have grape tomatoes, tomato slices will work too!

This is EVERYTHING. I have been eating avocado toast with a soft boiled egg like it’s my job, but I am TOTALLY open to switching it up for a little caprese action. YES PLEASE. Pinned!

Served this as an appi for a birthday dinner, and everyone loved it! The balsamic drizzled on top is just the perfect touch. I prepared all ingredients and everyone built their own toast to their tastes – it was fun and everyone had just the balance of ingredients they wished. Great summer treat…and easy!

When I put this through a calculator, it comes up with 478 calories per serving. Does that seem right to you? I thought that was awfully high.

I love the recipes! We have identical palates! And you passed my test. haha. I always get irritated when Caprese recipes do not call for fresh or Bufala Mozzarella. The cheese for me is everything! Obsessed with this. I never cared about avocado toast before, I really am not a huge fan of avocado. But your pictures drew me in. And OMG I can’t stop eating it. I literally eat this for breakfast 2-3 days every. single. week. The balsamic glaze is what puts it over the top for me.

This is my new favorite lunch. Made mine with sourdough bread and it was nothing short of amazing!
After a visit to my local farmer’s market I had everything needed for this recipe. It’s wonderful,easy and combines some of my favorite flavors. We served it with a big salad, so no cooking required. Love when that happens.

This recipe is fantastic and I was not an avocado fan until this recipe! I put extra virgin olive oil on both sides of Dave’s thin sliced powerseed bread, put in oven on broil flipping til both sides were toasted. When it came out of oven I rubbed both sides with a cut clove of garlic. Made the avocado as above. Didn’t have fresh mozzarella so used shredded from the bag. Sprinkled a little Italian seasoning on top. Added cut tomatoes and balsamic glaze! Ate it 2 days in a row for lunch and counting! Thank you so much for this recipe.
