Avocado, Hummus, and Egg Toasts

Avocado, Hummus, and Egg Toasts-one of our favorite quick and healthy meals! Great recipe for any time of the day!
We have six chickens and we are always looking for ways to use up our fresh eggs. I am usually not an egg eater, but I do enjoy the eggs from our chickens. I really can taste a difference. You can’t beat a fresh egg:)
When we have too many eggs in the fridge and I am feeling lazy, I always make Avocado, Hummus, and Egg Toasts. This recipe is so easy and it has all of my favorite things! Plus, it is good any time of the day…for breakfast, lunch, dinner, or even a healthy snack!
I eat avocado toast almost every day. It is my favorite! Caleb loves it too. When I make Avocado, Hummus, and Egg Toasts I feel like a queen. It takes plain old avocado toast to a new level of goodness.
This recipe is so simple. The hardest part is not burning the toast…ha! I start by spreading a layer of Sabra’s Classic Hummus on a piece of toast. Next, I add a layer of smashed avocado that has been seasoned with sea salt and black pepper.
Now let’s talk about fried eggs for a second. Josh loves his eggs over easy, which means the yolk is still soft and runny. I personally can’t stand runny yolks. It kind of grosses me out, so I always cook my eggs over hard. I don’t want any yellow stuff oozing out:) You can cook your eggs however you like them for this recipe!
I like to top the eggs with chopped tomatoes. The pop of red is the perfect finishing touch!
Avocado, Hummus, and Egg Toasts are a favorite at our house! They are super easy to make and always hit the spot. I hope you enjoy them too!

Hummus, Avocado, and Egg Toasts
Ingredients
- 2 large eggs
- 2 pieces toasted bread we use whole wheat
- 4 tablespoons Sabra Classic Hummus
- 1 medium avocado peeled and pit removed
- Sea salt and black pepper to taste
- 1/2 cup chopped grape tomatoes
Instructions
- 1. Cook one egg at a time. Spray a small skillet with non-stick cooking spray. Crack an egg into the pan and cook over medium heat. Josh likes his eggs over easy, with a runny yolk. I like my eggs over hard, with no runny yolk. Cook your eggs to your liking.
- 2. Using a fork, smash the avocado. Sprinkle with sea salt and black pepper, to taste.
- 3. Spread hummus on each piece of toast. Add a layer of smashed avocado. Top with cooked eggs. Sprinkle chopped tomatoes on top. Season with additional salt and pepper, if desired. Serve immediately.

you could probably also do this with a poached egg if you wanted to avoid frying!

What an amazingly simple idea yet it sounds delicious. Many of our Happy Vegetarian followers and readers eat eggs so this will work for them. Even if you don’t eat eggs the sea salt and black peppered avocado on toast with hummus would be great with me. Thanks.

This is soooo in my comfort zone. I think I could live on avocados. I recently visited my parents in their winter CA desert home and was in heaven with all the avocados & fresh grapefruit. I haven’t tried this with the addition of the hummus, but will do it next time I have an avocado. The Sabra hummus made me laugh because after years of making my own hummus I bought some because I was short on time and my family eats a lot of hummus. Well, my daughter told me it was way better than the homemade version. Oh dear, I either have some tweeking to do with my hummus recipe or just settle on buying the Sabra!!
I was going to ask if you were still eating over easy eggs during your pregnancy! You are super lucky you don’t like them–that is probably the one thing I miss the most. I know it wouldn’t kill me to eat them, but I hate the horror stories, haha. This looks great!

im not a savory type of breakfast person…except on the weekends- on the weekends i like the eggs/toast/potatoes combo. i usually do oatmeal and yogurt and smoothie type of things for breakfast. but this looks like such a good idea for a nice light and healthy lunch! I love sabra too i think its my favorite hummus brand.
I’m also scared of runny yolks!
Waiters always stare at me like I’m crazy when I order my eggs over hard. Sometimes they act like they don’t even know what that means so I have to explain that I want the yolks cooked all the way through. I feel bad doing this, but I’ve even had to send my meal back a few times after cutting into my eggs and seeing the yolk ooze out. Over hard PLEASE!

I used to be just like you with eggs – I hated runny eggs. They HAD to be fully cooked. Then one time I ordered Huevos Rancheros (I even remember the dish that changed me!) and the eggs were runny. I was kinda mad about that but I went ahead and ate it and I was like “this is so darn good.” So now I’m a changed woman. LOL.

I was looking for something different for breakfast this morning (different from weekday smoothie) and thought this looked interesting (my husband was skeptical). It was delicious! All the flavors go together perfectly and it was quick to put together. Topped with some chopped tomatoes from the garden…delish!!!
